Tempting Tuna Salad

WOW! I love tuna salad and this is probably the best I've ever tried. I didn't have miracle whip on hand so I used light mayo - about half that the ingredients ask for. Still great! My sister and I have been eating this every other day for 2 weeks now, YUM!

Spiced Sweet Roasted Red Pepper Hummus

Tastes great. Tahini is hard to find, especially in the middle of the night when ethnic markets are closed and 24-hour grocery stores don't generally carry it (generally when I would crave something like this).. As a substitute for tahini I blended 1/2 tablespoon of toasted sesame seeds in a food processor for ~15seconds, and added a tablespoon of natural peanut butter (i used Adams 100% natural peanut butter), and a drizzle of sesame seed oil if you can find it (i found all 3 of these ingredients at wal-mart), then I put in the rest of the ingredients listed on the recipe and processed. Turned out awesome. Roasting your own peppers is also better, just roast directly over stove top flame or grill until evenly charred all over. Mm mm delicious!

Chicken Tequila Fettuccini

Ohhhhh myyyyyy, great recipe! Tastes just like the one at California Pizza Kitchen!! Lovely as is but I made it a few times so got to play around with it a little. Definitely needed more lime (4 limes in total). Did a black pepper rub for the chicken and then marinated it in 2 tablespoons soy sauce, 2 tablespoons tequila, & 2 tablespoons lime juice. Added sliced mushrooms to the dish (in with the bell peppers and onions), used half and half instead of heavy whipping cream, and I like much more veggies in my dish so used a whole red onion, 2 green bell peppers, 1 red pepper and 1 yellow pepper, and 4 tablespoons minced jalapeno peppers (without seeds). Also upped the garlic (I love me a lotta garlic!) to about 4 tablespoons. Didn't find it salty enough for my taste so added like 1 or 2 teaspoons seasoned salt and 2 tablespoons soy sauce to the final product and heated through. FABULOUS DISH, can't get enough!

Mini Cheesecakes I

I tried this with a few changes and it was really good! I'm sure it's great exactly as is too! I like pecans in my crust so I used the crust from the "Pumkpin Cheesecake II" recipe on this site by Cathy - (Combine 3/4 cup graham cracker crumbs, 1/2 cup ground pecans, 2 tablespoons white sugar, 2 tablespoons brown sugar, and 1/4 cup melted butter or margarine and mix well).. I made a batch of filling as is in this recipe, another batch with "White Chocolate Raspberry Cheesecake" recipe by CindyAnn for filling (same pecan/graham cracker crust I mentioned earlier), and a third batch with filling from "Chocolate Cappuccino Cheesecake" recipe by Cigdem Buke Ugur (with an oreo crust). Everyone seemed to enjoy the "White Chocolate Raspberry" one the most!

Jalapeno Popper Spread

Really awesome as a spread or a dip. Followed others' suggestions: mixed some cheddar cheese in and topped with a cheddar cheese/bread crumb mixture then baked. I liked this even better than actual jalapeno poppers.. Took it to a friend's game party and everyone really liked it. Served with toasted french bread slices, but goes nicely with tortilla chips too.

Mouth-Watering Stuffed Mushrooms

Stupendous! This is my go to appetizer: easy to make, EVERYONE loves them. When me girlfriends come over there is always a special request for these... I feel like they get soggy and fall over when I baked them as such, so I wrap foil tightly over the open top of a pan and poke holes in the foil and place the filled mushrooms on the foil so any leaking liquid can strain into the pan.. sometimes I mix in imitation crab into the cheese mixture before filling, pretty tasty that way too (a little lighter on the cheese, and changes the texture a little bit). Bon appétit!!

these were really good... followed the directions exactly except i omitted the olives. very flavorful, rich/creamy, and close to one of the best enchilada dishes i've tried.. family gobbled em up :)
