Tempting Tuna Salad
WOW! I love tuna salad and this is probably the best I've ever tried. I didn't have miracle whip on hand so I used light mayo - about half that the ingredients ask for. Still great! My sister and I have been eating this every other day for 2 weeks now, YUM!

Spiced Sweet Roasted Red Pepper Hummus
Tastes great. Tahini is hard to find, especially in the middle of the night when ethnic markets are closed and 24-hour grocery stores don't generally carry it (generally when I would crave something like this).. As a substitute for tahini I blended 1/2 tablespoon of toasted sesame seeds in a food processor for ~15seconds, and added a tablespoon of natural peanut butter (i used Adams 100% natural peanut butter), and a drizzle of sesame seed oil if you can find it (i found all 3 of these ingredients at wal-mart), then I put in the rest of the ingredients listed on the recipe and processed. Turned out awesome. Roasting your own peppers is also better, just roast directly over stove top flame or grill until evenly charred all over. Mm mm delicious!

Chicken Tequila Fettuccini
Ohhhhh myyyyyy, great recipe! Tastes just like the one at California Pizza Kitchen!! Lovely as is but I made it a few times so got to play around with it a little. Definitely needed more lime (4 limes in total). Did a black pepper rub for the chicken and then marinated it in 2 tablespoons soy sauce, 2 tablespoons tequila, & 2 tablespoons lime juice. Added sliced mushrooms to the dish (in with the bell peppers and onions), used half and half instead of heavy whipping cream, and I like much more veggies in my dish so used a whole red onion, 2 green bell peppers, 1 red pepper and 1 yellow pepper, and 4 tablespoons minced jalapeno peppers (without seeds). Also upped the garlic (I love me a lotta garlic!) to about 4 tablespoons. Didn't find it salty enough for my taste so added like 1 or 2 teaspoons seasoned salt and 2 tablespoons soy sauce to the final product and heated through. FABULOUS DISH, can't get enough!
