Split Pea Soup without Pork

Sausage Balls

My mother always made these with 3cups baking mix. They "puffed" a bit more that way. Feel free to change up the types of sausage and cheese. Serve with a bbq or mustard dipping sauce at parties. Freezes very easily!!

Bacon Ranch Cheese Ball

I thin it out with sour cream and use it to make party sandwiches, of ocurse skipping the nuts. Thin even more with some milk and it's a food dip for veggies or plain chips.

Cinnamon Teacake

So easy! So good with coffee or hot tea! I bake it in a round cake pan and add a crumb topping (instead of sprinkling with sugar-cinnamon mix from the recipe) creating an almost coffee cake. Besides, it takes mins and I usually have everything in the pantry already.

Banana Bread VII

I tried this recipe only because it was the last day before the shopping and I was out of flour with bananas going black. It was GREAT. I omitted the walnuts (hubby and I both dislike), but think I might try some chopped dates and a hint of cinnamon next time. Far too easy and good.

Beef Tips and Noodles

I used stew beef, mixed up the sauce and marinated the meat overnight. It was so tender and flavorful. I also served it over mashed potatoes for a twist. My husband had to text my brother and brag on me.

Sixteen Bean Sour Cream Soup

No biggie using dried beans. It simply takes time/ planning to soak. I chop sandwich meat ham and cook it w/o the sour cream so I can freeze some easily. We just stir sour cream in each bowlful. True, it's an unappealing color but tastes great enough to remain on our favorites list. Serve with cornbread.

I used ginger in place of nutmeg, thickened the sauce with additional cheese and sprinkled Season-All instead of paprika. That works well for us with brown rice and veggies for a nice, light meal.

Fantastic Black Bean Chili

I subed a can of chickpeas for one of the black beans. And I forgot the red wine vinegar. We loved it anyway! I may use one can black bean, one can chickpea and one can red kidney bean next time!!

Beef 'n' Green Bean Pie

My husband raved about this simple to make dinner. I used ground turkey to make a low fat version, otherwise I stuck to the recipe. I think next time I'll season it with a bit of ground black pepper.
