Creamy Chicken on Linguine

Good recipe. I followed Cookette007's suggestions of doing and egg wash and breading with panko crumbs. I used more cream than it called for (and double the water) and thought it was too runny. Maybe just 50% more liquid for the sauce. I added red pepper, asparagus, mushrooms, green onions and sun-dried tomatoes to the chicken broth, covered, and simmered 10 minutes (as per recipe). Everything else I followed to the original recipe.

Apple Nut Muffins

Made these according to directions except I added 2 t. cinnamon to batter. I topped with the streusel from the Banana Crumb Muffins Recipe (1/3 cup packed brown sugar, 2 tablespoons all-purpose flour, 1/8 teaspoon ground cinnamon, 1 tablespoon butter). The recipe made 24 muffins and 36 mini muffins. Delish!

Roquefort Pear Salad

Delicious! Was much loved at our family christmas party. The dressing was wonderful--I did double it (although I didn't use quite all of it) and toss right before serving. I left off the avocado--which might be nice--but it was fine without.

Broccoli, Rice, Cheese, and Chicken Casserole

With changes: 3 large chicken breasts (diced), marinated in olive oil and onions, seasoned with salt, pepper and Italian seasoning. I didn't have soups so added 1 can cream of broccoli and 1 c. sour cream. Melted the butter, used fresh broccoli (steamed in micro for 5 min) and 2+ cups of Mexican blend cheese. Stirred together and topped with bread crumbs. My 5 & 2 year old ate it up! So rare--this is a winner.

Steakhouse Wheat Bread for the Bread Machine

This is the best bread I've every made in my machine. It does make a small loaf, so you'll want to set it to a 1 of 1.5 lb loaf. Also, I didn't have instant coffee, just regular, so I added 1/2 t. ground coffee. More honey might be a nice addition too. I also took out about 10 minutes early and it was perfect!

Clone of a Cinnabon

So easy with a bread machine! I had too much cinnamon sugar mixture. They are definitely SWEET so they could probably do with about 1/2-3/4 of the cinn-sug mixture. I also put them in the fridge (unbaked, after rolling) and then straight into a 350 degree oven for 25 minutes in the morning. They were perfect!

Shepherd's Pie VI

Very good. I followed the others suggestions and added 1/4 c. worcester sauce and 1 pack gravy with 1 c. water. I also substituted about 14 oz. frozen peas and carrots for the mashed carrots. Worked out very well. I would suggest adding milk or cream to the potatoes as they were a little bit dry. Very good though, I will make again.

Peanut Butter Cup Cookies

Excellent! Freeze the pb cups while prepping (earlier if possible). Don't make the balls too big, they are harder to get out if they go above the muffin tin. Add pb cup as soon as they fall, then put in fridge before attempting removal.

Scottish Shortbread III

The first time I followed the recipe exactly, it was good but a bit too dry and done. After looking at everyone's reviews I made a few alterations and it came out perfectly. Here's the summary: -Added 2 t. of pure vanilla -Reduced flour to 4 c. -Softened the butter before mixing (I stuck with the salted) -mixed it all in the Kitchenaid -kneaded it a bit before pressing into pan -Baked @ 350 degrees for 10 min, then reduce to 300 degrees and bake for only 15-20 minutes. They have become our Christmas tradition and are like little bites of heaven!
