Creamy Carrot Soup

very tasty! I cut back on the butter and used some olive oil instead as recommended by other reviews...but left the cream the same. I was making it for a mom about to have a baby and the high calorie content sounded good for a nursing mama....not to mention all the veggies!! I also left the skin on the potatoes....blended up great and still tasted delicious! Definitely a keeper...especially when carrots are not all the appealing to me on a regular basis! :)

Cranberry-Pineapple Minis

Definitely turned out fine, but I suppose a little too "healthy" for me! :P I'm more of a chocolate girl and I just wasn't very satisfied with the tastes...but a great snack for kids...we also used it at a friend gathering.

Okay, but if you follow the recipe as is...too dry for us...could use more hamburger and if you add more stuff like others did, I'm sure it would be better...

Banana Cream Pie with Chocolate Lining

This had such a weird bland taste of the whipping cream maybe?...and ther wasn't enough chocolate to make it even close to decadent. Also didn't care for the bland taste mixed with whiskey taste...nobody liked this in our house...they all said the same thing.

Terry's Texas Pinto Beans

Go with some of the other suggestions. I made the mistake of explicitly following the recipe and now I have beans in the freezer that I have NO motivation to eat. I always forget to salt pintos while they are cooking and if you don't they are next to impossible to make them taste anything other than bland...even the spices didn't help.

Salmon and Swiss Chard Quiche

I got in a hurry with this so it was probably more operator error than recipe error, but I just wasn't that impressed with the flavors. Of course, salmon is not a typical food item for us either. However it is a great way to use up too much swiss chard...tastes very similar to spinach! :)

All Day Apple Butter

I took the advice of cutting the sugar in half...and I even added more apples as they cooked down...came out with a really nice blend of sweet and tart as I used tart green apples. I also let these start cooking overnight and then all through the next day....turned out great!

Delicious. Perfect use of too many end of season green tomatoes. I used the called for amount of sugar, but used sugar-free gelatin....perfect. Absolutely delicious!

Banana Pie

NOTE!! Cream cheese needs to be room temp to become creamy!! I couldn't understand why the whole mess was not going according to the directions until I read one of the reviews. Because I was already "too late" in the process, I ended up putting the whole pudding mixture in the blender to get it to actually break apart and congeal. Even then it was runny and I had to let it set a bit before pouring it over the crust and bananas...and then I had to let it set a bit more before adding the next layer of bananas. Could've been prevented if the directions had been a little more clear for those of us not accustomed to using cream cheese in such a way. But now it looks great and from what I've sampled, it tastes great too! Still I wanted to START my review with the cream cheese alert so that if you are just glancing over the reviews, hopefully it will catch your attention! :)

Feta and Bacon Stuffed Chicken with Onion Mashed Potatoes

Delicious, yummy, yummy! A little laborious on the prep work, but well worth the effort if you want to make an impressive meal!! I added green beans flavored with garlic and salt as a side dish. Great meal!!

Mocha Chocolate Chip Banana Muffins

Delicious, but FOLLOW OTHER REVIEWS!! I did as recommended using only 1 cup of sugar, 1 cup applesauce and 1/4 c. of oil instead of margarine as well as using 4 tbsp. of coffee instead of one. Turned out wonderfully moist and not too sweet. I can see why some would be disappointed with this recipe as is.

Thai Beef Salad

I marinated this the recommended time and thought the recipe was only okay. However, it sat in the fridge continuing to marinate for at least two days before I finally resigned to eat the rest of the leftovers....absolutely DELICIOUS! The key is to let it marinate a day or more! Wonderful summery flavor and gets all the way through if allowed to sit for awhile!
