Raspberry Lemonade Biscotti

Reviewed: Sep. 4, 2008
I wanna make 1/3 of this recipe but I'm kinda running low on eggs so would it be ok if I replaced the 1 egg with 2 tbs of potato starch & 2 tbs of water????? And what can I do to intensify the lemon & raspberry flavor without one over-powering the other?????

Brownie Biscotti

Reviewed: Aug. 23, 2008
I made this recipe today along with 2 other biscotti recipes (Cinnamon Sugar Biscottis & Double Chocolate Biscottis) & I gotta say these must be my favorite out of all 3! After the first bake, they were warm, soft & tasted like an awesome brownie (I wonder if you could just then take them out and leave like that as brownies because if you could then this would be the best brownie recipe ever!). But after the second bake they got crispier & harder & got a slight bitter chocolate taste which was just fine! The only changes that I made were that I didn't add the vanilla extract because I couldn't find any in my house. I also didn't add the semisweet chocolate chips but instead I added 1/4 of a bar of Lindt's Dark Chocolate & Orange chocolate along with 1/8 of a bar of Lindt's 85% Dark Chocolate. I also added 2 tsp of powdered sugar so that they wouldn't be too bitter because of all the dark chocolate. I also added 2 tbs. of unsweetened coconut flakes & 5-8 chopped hazelnuts. I didn't do the egg wash. I found the raw dough to be a bit TOO dry but that might because when I was making the Double Chocolate Biscottis, 1 egg had 2 yolks in it so I tried to divide it but I guess the other one had more of the egg white so there was less liquid so I just added 1-2 tbs. of milk & that helped a bit. Also I guess I didn't bake them long enough because when they were done & cooled they were still slighty soft but barely but that's fine. They really do taste like brownies & are the best c

Double Chocolate Biscotti

Reviewed: Aug. 23, 2008
I made these biscottis today along with 2 other biscotti recipese (Cinnamon Sugar Biscottis and Brownie Biscottis)& I'm proud to say that in texture & crispiness.....these are true biscottis!!!!! After the first bake they were warm, soft & tasted like brownies! (I wonder if you could just take them out & leave them like that because if so then this would be the best brownie recipe ever along with the Brownie Biscotti recipe because after the first bake they taste the same!) But then after the second bake they got dry & crispy & got a slight bitter chocolate taste which was just fine! The changes that I made were that instead of adding the white chocolate squares & semisweet chocolate chips I added 1/4 of a bar of Lindt's Dark Chocolate & Orange chocolate along with 1/8 of a bar of Lindt's 85% Dark Chocolate that I chopped up into chunks along with 2 tsp. of powdered sugar just so that it wasn't too bitter from all of the dark chocolate. I also added about a tablespoon or 2 of shreaded unsweetened coconut & like 5-8 hazelnuts. The result was a very gourment TRUE BISCOTTI!!!!! (but for flavor I personally prefer the Brownie Biscotti recipe.....they really do taste like brownies! YUM-O!!!!!)

Cinnamon Sugar Biscotti

Reviewed: Aug. 23, 2008
I made this biscotti today & I gotta say..... it made me feel all warm & fuzzy inside! :D (The cinnamony-sugary taste reminded me of the holidays.) When they were done they really did look like biscotti & I was very pleased. My only problem was that I forgot to add the baking powder & maybe I didn't bake them long enough because they reminded me more of a cookie but the taste was O.K. (at least my mom liked them!)
