Mall Pretzels

Reviewed: Aug. 23, 2011
I'm a almond pretzel fan and thought I would try to make these. In the same batch I managed to make 8 pretzel dogs and 6 decent sized pretzels, some coated with salt the other in cinnamon sugar. The only change I made was that I baked them at 425 for about 10 minutes. The pretzel dogs looked wonderful, but taste and looked as if I wrapped them in canned biscuit dough but it didn't matter they still taste good. The pretzels turned out nicely also. I still rate it 5 stars because they taste and looked great. I think I would rather buy one at the mall and leave the mess alone though.

Easy OREO Truffles

Reviewed: Dec. 16, 2010
Taste great, but not worth the effort to me. You really do need to work fast dipping the frozen balls into the melted chocolate and by doing that the chocolate hardens (too late to add the remaining oreo spinkles).

Awesome Spicy Beef Kabobs OR Haitian Voodoo Sticks

Reviewed: Dec. 5, 2010
This had great flavor. I changed some things because I did not have them. Instead of the bouillon granules I used 14.5 oz of beef broth, and did not add the salt. Instead of cubing my meat, I chose a sirloin roast and sliced it thin. I combined all the ingredients and marinaded the meat about 2-3 hours. I did not use the skewers but pan fried without the oil, until done. These turned out to have a great taste as roast beef sandwiches.

Imitation Crab Salad

Reviewed: Dec. 5, 2010
Made this salad for a party and it was well received. I only used 4 eggs and 2 stalks of celery and added about 1/2 tsp of old bay blackened seasoning. There were no leftovers.

Cajun Appetizer Meatballs

Reviewed: Dec. 4, 2010
These were FANTASTIC. I used all the ingredients but increased the lean ground beef by 1/2 pound and added 1/2 more of other ingredients except for the milk (which I left at 1/4 cup). I baked half the meatballs and fried the other half in a non-stick skillet (very little oil since the beef had very little fat) and tossed them around until they were done (about 8-10 minutes - I preferred the fried meatballs as they were more firm) I also used 3/4 cup of "Sticky Fingers" Habanero Hot BBQ sauce and 1 cup of a store brand Peach Preserves (the sauce was flavored to my taste as I like a sweet and spicy combination). I thought the meatball flavor was delicious. I will most definitely make these again. (Yields 45 meatballs)

World's Best Potato Salad

Reviewed: Nov. 14, 2010
This IS a good potato salad though a little time consuming. I followed the recipe with the exception of the small onion, I opted for green onion and reduced the sugar to 1/3 cup and used 4 eggs instead of 6. I also added 1 tsp more of corn starch and added the tsp of celery seed per reviews . Though I enjoyed every bite, (the dressing was delicious) I only incorporated 1/2 of it to the potato mixture and bottled the remaining dressing). It wasn't overly sweet to me , so reducing the sugar was a good idea (the south adds sugar to everything). It had a subtle taste. I will definitely try this again and tweek it next time by adding some dill or sweet relish.
