Lemon Cream Pasta with Chicken

Reviewed: May 17, 2011
This was simple to make, and fairly good to eat. My toddler gobbled it up. However, I thought it was a bit too lemony - if I make it again I will either omit or lessen the lemon juice when boiling the pasta, or I will omit the lemon zest and give it a try. The chicken had great flavor, so I think the lemon on the chicken is a must while baking, it came out moist and perfect.

Rainbow Clown Cake

Reviewed: May 17, 2011
I made this recipe into cupcakes for my daughter's second birthday party. I didn't mix the colors, just dolloped a bit of each color into the cupcake liners to bake. Everyone was in awe over the colors! I did use gel food coloring, and the colors were vibrant. Simple to make, though a bit more time consuming than I anticipated - however it was well worth the effort. I topped with a simple butter cream frosting and rainbow sprinkles.

Cucumber Sandwiches III

Reviewed: May 17, 2011
Made as written.... I used a french baguette vs. french bread with one cucumber slice on each piece. Not only did I think they were delicious, but several people I made them for RAVED about them and asked for the recipe. Excellent recipe, thanks!

Easy Sausage Stuffing

Reviewed: Nov. 25, 2010
This worked out great for me. I did need to increase the chicken broth to closer to 3 1/2 cups. I used the savory sage sausage roll, I think that made the stuffing. With plain sausage, it might not have been as flavorful. Another reviewer mentioned that she would add sauteed mushrooms the next time she made it, I think I will do the same... it would be a fabulous addition to this dish. Very easy, very good - everyone gobbled it up at my Thanksgiving dinner today.

Simple Hamburger Stroganoff

Reviewed: Nov. 11, 2010
Great! I seasoned the meet with salt, pepper, garlic and some onion. I doubled the mushrooms (I use fresh sauteed mushrooms when I have extra time). My picky toddler gobbled it up! My husband and I enjoyed it as well. It was quick and easy to make.

Bavarian Pot Roast

Reviewed: Jun. 29, 2010
I made as written - with the exception of using 1 tsp of cinnamon instead of two, based on several other reviewers recommendation. I was concerned, as it seemed an odd flavor combination - but it turned out delicious! Tender (falling apart!), flavorful and a keeper recipe!

Quinoa Tabbouleh

Reviewed: Jun. 14, 2010
Very "fresh" tasting! I made exactly as written, and thought it was very good. However, I thought it could use just *bit* more flavor, so added some feta - which I thought made something that was already good, even better! It makes A LOT - and since I'm the only one in my house that will eat it, next time I'll halve the recipe.

Tuna Salad Muffins

Reviewed: May 2, 2010
To be honest, I didn't have high expectations of these muffins. However, they did turn out pretty well. I used whole wheat flour and had to substitute sour cream instead of yogurt, as that is what I had on hand. I was impressed - and will make them again.

Strawberry Cake from Scratch

Reviewed: May 1, 2010
Made exactly as written, and it turned out perfect. I made this cake for my daughter's first birthday party and frosted it with "Cream Cheese Frosting II" from this site. I sprinkled the cake with pink sugar - and it was a hit all around. Because the cake is rather dense, a small piece goes a long way... and oh-so-good! Thanks for the recipe!

Meatball Nirvana

Reviewed: May 1, 2010
Good meatballs! I doubled the recipe and froze half of them. I used 1 lb of ground pork and 1 lb of hamburger. I also used Ricotta cheese instead of the skim milk based on someone's recommendation, I found I still had to add some milk, however. They turned out EXCELLENT!

Chicken Pot Pie IX

Reviewed: May 1, 2010
Great comfort food. I doubled the sauce based on reviews, but found that to be WAY too much. Next time I'll stick with the gravy as written. I had left over chicken- so just added that at the end. The only other thing I did was peel and cube two small potatoes - and boiled them with the other vegetables. I boiled the vegetables in chicken stock- and saved the stock to make the gravy.

Fluffy French Toast

Reviewed: Apr. 11, 2010
Fantastic! I've always struggled with french toast being flat. These pieces held their shape - the presentation was GREATLY improved. The taste was great, too! The only change I made was that I added the flour to the liquid ingredients to help prevent clumping vs. the other way around.

Mexican-Style Goulash

Reviewed: Apr. 10, 2010
I modified this slightly based on others' recommendations, as we like spicier - and it turned out great! I added 1 packet of taco seasoning and a can of drained and rinsed black beans. I substituted 2 cans of Rotel instead of the diced tomatoes. Before serving, I mixed in a half block of cream cheese and skipped the cheddar. We'll make it again!

Whole Wheat Blueberry Pancakes

Exellent! I didn't use artificial sweetener, as I was looking for a more "natural" recipe - so added 2tbsp of brown sugar instead. Light, fluffy and... Delicious!

YUM. though, unless you're expecting A LOT of company - definitely halve the recipe. A half recipe still makes a giant bowl.

Good. Made as directed with the exception of using cooked frozen shrimp. Very rich, though that was expected. Thanks for the recipe!

Asian Orange Chicken

Reviewed: Feb. 15, 2010
I have made this dozens of time now... we love it in our house! I prepare almost exactly as written. To make things a touch easier, I just squeeze the juice of the orange I zest, I don't measure the orange juice. I use a little more than 3tbsp of oil to cook the chicken in. The LESS you touch/stir the chicken, the better your chance of it turning out crispy. Mine works out beautifully. I do not mix the chicken with the sauce, I served it on the side, so people can use as much or little as they want. Fabulous, easy recipe. I also have made it last minute (without a chance to marinate the chicken). I just toss the chicken in a bit of the sauce before I dredge the chicken in the flour. It still turns out delicious.

Roast Chicken with Rosemary

Reviewed: Jan. 2, 2010
The chicken turned out moist. I was afraid it would be a bit bland, so I stuffed some fresh rosemary under the skin of the chicken, and seasoned the outside of the bird with some olive oil and seasoning. I don't recall how much time it took to cook it - as I used a meat thermometer to monitor... I do know was done before the recommended cooking time in the recipe. Per another user's recommendation I roasted the chicken on a bed of potatoes, carrots, onion and chicken stock. Everything cooked perfectly!
