Greek Veggie Salad II

Very, very good salad. I made the dressing exactly as specified and tasted it. I found it very acdic so I added a Tablespoon of dried mint and 1 teaspoon of granulated sugar. Then I let the dressing sit while I prepared the rest of the meal. When it came time to eat, I added about 1/2 of the dressing to the vegetables. The addition of sweet and the mellowing time worked wonders on the dressing. The mint came across as an undertone of flavor; definitely a good addition. Next time, maybe less basil, less red wine vinegar and a boost to the lemon juice amount. Thank you for an excellent recipe!

California Chicken Enchilada Casserole

I really enjoy this dish. It takes a little time to put it all together but the result is delicious. The basis for this recipe came from the Governor's Mansion Cookbook here in Sacramento, California. Now that I have the recipe teaked to my liking I like to change things up here and there - adding roasted red peppers, sun dried tomatoes, chopped spinach, cream cheese, etc. Lots of possibilities!

The Best Banana Bread

Moist and flavorful, easily a keeper. I ~almost~ had enough banana for the recipe but not quite. Rather than run to the store for just 1 more banana, I peeled and mashed up a pear that was on its last legs. I didn't really taste the pear in the final bread but the addition ensured a moist bread.

Yummy, yummy, yummy! Easy and quick to prepare. I bumped up the garlic to 3 cloves and increased the Italian seasoning and basil. Over whole wheat pasta, this was flavorful and filling.

Mexican Shrimp Cocktail II

Very good! Excellent as written. I hesitated to add the horseradish because it didn't strike me as an authentic ingredient. But I'm glad I did! The subtle heat added more depth to the dish. Be sure to give the salad time to "set" as the flavors really do need to mellow and merge.

Dry Ranch Style Seasoning for Dip or Dressing

Pretty darned good! I made it exactly as posted then tossed chicken pieces in the mix and baked them. My swarm of teenagers thought it was yummy. Next time I'm going to reduce the black pepper, switch to sea salt, and add dill. Thanks for a great recipe!

GREAT bean recipe! Prepared as presented with 1 change - was out of tomato paste, substituted a can of fire roasted tomatoes. Good balance of spice and heat. Defnitely a keeper!

Lowfat Baked Chicken

Messy? Yes, but well worth the mess. I have new converts to yogurt in my house. Everyone loved it. I had to substitute bread crumbs for cornflake crumbs. Didn't think anyone would care for crushed Fruit Loops! I did season the yogurt with lemon pepper and the crumbs with onion salt, pepper, parsley, and chives.

Oven Roasted Red Potatoes

Ever-so-yummy! I added baby carrots to the mix and they were excellent. I doubled the recipe, thinking I'd have roasted potatoes for a potato salad the next day. BUT, the refrigerator raiders got every single one before morning. This speaks volumes for the recipe - a definite keeper.

Chicken Breasts with Balsamic Vinegar and Garlic

Very VERY tasty and simple to make. I adapted the recipe to a baked version because we're watching our fat and calories. I left off the 3 T of olive oil and browned my chicken using a olive oil spray, deglazed the saute pan with chicken stock, baked everything covered in a medium baking dish gently at 375 for 1 hour, and left off the butter. We used the pan juices as they were but next time I'll try thickening them with cornstarch. Very good recipe, thanks bunches!

A Jerky Chicken

Great recipe! I used boneless, skinless breasts and thighs and bumped the sugar up by 1 Tbs (accidently.) There were teens hovering around the kitchen as the chicken began to broil and not a single shred of leftovers.

Slow Cooker Adobo Chicken

Really good! I was hesitant about "pickling" my chicken but am glad I went forward. I followed the recipe to the letter excepting I used white vinegar for cider vinegar. No sugar! Whether its authentic or not, this is a flavor combination the my family really likes. I even enjoyed the aroma of pickling chicken but then again, I'm a pickle fiend. Thanks for a great recipe.

Easy Refrigerator Pickles

I caught the pickling bug this year and went searching for my mom's Bread and Butter Pickle recipe. While waiting for it to appear I tried these. They're terrific! I left out the cloves and reduced the sugar. I'll put a reduced clove amount in next time to try and get close to the taste of mom's recipe. Will also add sweet red peppers next time for color.

One Bowl Brownies

Nice chocolate flavor but mine were dense and cake-like but somewhat dry. I'll try again using butter and not margarine. Will probably pull them out of the oven at 30 minutes and let them finish with carry-over heat. Good recipe. Thanks bunches!
