German Spaetzle Dumplings

GREAT recipe! I usually have to add a bit more flour to get the tacky dough, but it comes out BEAUTIFULLY! My husband likes this better than our favorite german restaurant haunt. :-)

Bacon-Wrapped Asparagus

YUM! I toss the asparagus in oil, then sprinkle with pepper and wrap in bacon, bake it on a broil pan for 20 minutes at 425, then broil for 10 minutes on the other side. It turns out soft on the inside, but the bacon and the tops of the asparagus spears get nice and crisp. DELICIOUS - and I don't even LIKE asparagus usually!

Tomatillo Salsa Verde

This came out pretty watery, but the flavor was fantastic. I added more tomatillos to thicken and cooked it down some. Overall, very good.

Keema (Indian-Style Ground Meat)

I made this with ground sirloin (my grocery store doesn't carry ground lamb, unfortunately), and it was very flavorful! Served with Nan or rice and a vegetable, this makes a fabulous main dish!

Indian Dahl with Spinach

I had to add more turmeric, salt and chili powder, but what a fabulous dish! I don't generally like cooked spinach unless it's just wilted with some bacon, olive oil and pine nuts, but this dish was so good I had seconds!

Phenominal! Great taste, better than most restaurants. I don't know why everyone doesn't make them like this. :-) I did add a chicken boullion cube with the water (just one) to give it an extra punch.

Balsamic Vinegar and Ginger Bok Choy

WOW! this was great! I had enver cooked with Bok Choy (I have had it in Chinese) before, but we got some in our CSA share this week. I made this with a bit less vinegar than called for, added in some salt and pepper and served it with a mediterranean shrimp & onion dish. It was fantastic!

Bacon Water Chestnut Rolls

WOW! These are amazing! Prep was super easy, just cut the bacon in half, wrap and bake. Made the sauce as it is written with a dash of some asian hot sauce for a kick, perfection. I did bake for 30, turn and then broil for 10 to make the bacon crispy. No need to do toothpicks until serving, just put them on the side and people can spear their own, the bacon seals it all together. I used whole water chestnuts, glorious crunch! Next time, I might marinate the chestnuts in some soy sauce & sugar for a couple hours before hand to add another dimension, but it doesn't need it!

Creamy Deviled Eggs

These are SO yummy! Made as stated, they are great - even better and better for you with these alterations: use neufatel cheese and low fat ranch, I use a bit less onion and add a tiny squirt of mustard, top half with sliced olives and half with sliced green onions then place on lettuce or spinach leaves for a beautiful presentation!
