Seriously the best eggnog. I don't usually enjoy eggnog but I cannot get enough of this stuff! Plus I'm lactose intolerant so it has to be worth it for me to drink it. My only suggestions would be to double the recipe and add a bit less sugar. I usually do about 1-1.25 cups of sugar. My husband also thought there was too much cinnamon, but that might have been because the teaspoon wasn't levelled.

Flourless Peanut Butter Cookies

These DO NOT turn out like the picture... So don't think that they will.. I find they are quite tasty with the 1/4 w.sugar & 1/2 b.sugar.. BUT they aren't very presentable. As soon as I tried to take them off of the pan, they just clumped together, and I've tried longer batches and cooling them for a longer period of time but no luck.. So, don't make them for anyone else but yourself, unless you don't care about presentation.

Onion Rice

So simple and delicious! I use olive oil because its within arms reach :) Definitely a great side dish, sometimes its all I will eat. To give it a fresh taste I add a bit of mint. Yummy!

Chocolate Peanut Butter Cups

These were very good. but I made the mistake of using semisweet chocolate and it was very chocolately, but still very good. My sister who doesn't like peanut butter loved these. I also made them with white chocolate and they were very good as well.

One Dish Chicken and Rice Bake

It tasted okay. But it was really watery when I made it. But that might have been my mistake because I used brown rice because that is what I had on hand. I also used milk instead of water. But all in all, it was okay.

Brooke's Best Bombshell Brownies

I was surprised how easy and delicious these were. At first when I was pouring the batter I didn't think it would make enough because I'm used to the boxed brownie mix but these brownies were so thick and yummy. I used the 1/2 brown sugar and 1/2 white sugar like others suggested. They were a huge hit with my family. They are actually requesting that I make more

Caramelized Onions on the Grill

I made this at camp this year and I figured, I had time to go for a short bike ride and it would be done by the time I got back, well I came back and there was hardly any left! Next time I will definitely make more then just 1 onion. My family told me that it was starting to smell so good that they couldn't hold back any longer. So delicious!!
