Creamy Avocado Pesto - Delish!

My first attempt at pesto and it came out so, so delicious! I did make a few changes to suit my family. I replaced the 2 cloves of raw garlic with an entire head of baked garlic. I took the advice of another commenter and added 1/4 C walnuts when adding the olive oil. So good and really easy. I can't wait to make this pesto again!

Mafioso Chocolate Cake

Surprisingly dense! I had some concerns about how it would taste... it was amazing! I loved the flavor and "mouth feel". Probably the best chocolate cake I've ever had. Used a cream cheese frosting instead of the icing listed. So good.

Cranberry Raspberry Sauce

Yummy! Substituted apple cider (for the kiddie's palates) as suggested in another review. I wish it had been a little thicker, but that's just my preference. It tasted amazing and was so easy. I think this will be our new holiday cranberry sauce.

Amaretto Cream Cake

Wow, yummy! I made the recipe exactly as directed and it was fantastic. I had worried the apricot filling would be too thin and soak into the cake but it didn't. Changes I'll make next time: This does make a lot of frosting, I'll probably follow another reviewers suggestion and add a thin layer of frosting to the inner layers of cake. The cake was a little difficult to cut in half, next time I'll freeze the layers before cutting them.

Chocolate Frosting II

Amazing, best chocolate frosting EVER. I did make a few small changes to suit my purposes. I used 4 tablespoons of heavy whipping cream instead of 2 tablespoons milk (for "fluffiness") and added an extra 1 1/2 Tablespoons of unsweetened cocoa. I'll be using this recipe as my go-to chocolate frosting from now on.

Special Buttercream Frosting

Wow! So much better than store bought frosting, everyone loved it- added bonus, no trans-fat, which is why we decided to go with homemade in the first place. I made a few changes based off the other reviews: Used all butter (unsalted) and only 6 cups of sugar which I sifted. I also used a pinch or two less salt than called for (since I'd cut back on the sugar). Turned out great!
