Dave's Mocha Chicken

Reviewed: Jan. 16, 2014
It was ok. nothing to rave about. I really had hoped for more taste, but it was quick and easy for a midweek meal. Probably won't make if again. Teriyaki chicken is better and easier.

My Amish Friend's Caramel Corn

Reviewed: Oct. 30, 2013
I made this 3 times. First in the micro but it wouldn´t dissolve the sugar. The next 2 times on the stove top. First time it burned, the second time it was good. I think u need a candy thermometer to get it good the first time on the stove top, this burns quite quickly once it is ready. This is the same as micro peanut brittle which is very easy. any leftovers, just pour on a greased surface, cool, break into chunks

Jelly Cookies

Reviewed: Feb. 3, 2013
nothing to special but quick and easy. I made half a recipe which made 30 one inch balls of dough. I made the well for the jam bigger and deeper to hold more jam- which is what will give this cookie dough sufficient flavor. I like the traditional shortbread thumbprint cookie much better, but these aren´t as delicate to make or eat.

Easy and good. Very pretty with a maraschino cherry in the center of each pineapple.

German Chocolate Cake Frosting

Reviewed: Jan. 9, 2013
this was just ok. needs salt, cook low about 20-30 min to thicken properly. This was too sweet using store bought coconut. grate your own and toast it in the oven. If I make it again with packaged coconut, need to reduce the sugar.

Orange Juice Chicken

way to much oj, and my oj (fresh squeezed) turned bitter during cooking. How can you have a 5 star recipe with no seasonings? Even with seasonings there was no saving this.

Mock Tuna Salad

Reviewed: Sep. 14, 2012
I made mine into egg salad. I put one hard cooked egg into it so I didn´t have to lie. My husband asked why I can´t make it this good every time! I seldom rate recipes, so U know this is really good.

Chicken In Coconut Sauce

Reviewed: Sep. 2, 2012
This is way to sweet. Half the cream of coconut should be more than enough-I had to add a lot more of everything to be able to eat this. It was still to sweet. You can always add more if you like it sweeter. This needs some work to make the flavor more complex.

Chicken in Sweet Pepper Sauce

Reviewed: Jun. 9, 2012
I added sauteed garlic to give the sauce/chicken a flavor boost, I used a little less wine and a little more chicken broth, and I used deboned leg/meat. The flavor was very good, but I did not like the presentation after cooking the chick in the sauce. Next time I will saute the meat until cooked through, remove the chick, make the sauce, then plate the chicken and serve the sauce on top. This is really easy and quick and I will make it again.

Melon with Ice Cream

Reviewed: Oct. 6, 2011
this is especially good with chocolate ice cream. personally, I don´t use fat free or sugar free, but if that´s what you´re use to, I´m sure it would please you. What is there not to like??

Pork Empanadas

Reviewed: Sep. 7, 2008
I didn't use this for empanadas, just to cook the pork. This was very good, rich, and I think it's a versatile recipe. I made wet burritos once and another time diced the pork instead and used it as a pasta sauce. I used extra onion, reduced the sauce, and used my immersion blender. The extra onion (well carmelized) once blended thickens the sauce without tasting like onions or needing flour, cornstarch, etc. My friends didn't know it was the same recipe used in a different way.

Cola Pork Chops

Reviewed: Aug. 28, 2008
Definitley lacks something, even though I used garlic and onion. Tastes more or less like a sweet bbq sauce. Easy, but I won't make this again. Wasn't at all satisfying.

Chicken Breasts with Balsamic Vinegar and Garlic

Reviewed: Aug. 27, 2008
I've made this twice, both times it was excellent. The first time I followed the directions, including flouring and sauteeing the chicken. The second time I did not flour the chicken and added diced tomatoes. I actually liked it a little better flouring the chicken. The trick is to flour the chicken and to shake off all excess flour, fry in a hot pan. The diced tomatoes suggested by another reader was really good also, and will probably be the way I make it from now on. This was really quick and easy, especially if you don't flour the chicken or dice tomatoes.

Microwave Mississippi Mud Cake I

This was so far from a cake it was pitiful. Several people asked what kind of brownie mix I used! If you want "chewy" fine. If you want a cake keep looking.

Fluffy Pineapple Pie

Reviewed: Aug. 20, 2008
Just OK. I had a pineapple I needed to use and there isn't much choice for no bake desserts. Noting how sweet others thought it was I used milk instead of pinapple juice, and it was still to sweet. No one complained, but they took a while to eat it, no seconds, and I didn't get even one compliment- very unusual.

Easy Lemon Chiffon Pie

Reviewed: Aug. 20, 2008
It was OK for the 5 minutes it took to make this, but as noted by someone else, it tastes like what it is-- whipped topping and jello. This is good for the kids I think, not forever making something that is gone in 3 minutes.

Green Chili Stew

Reviewed: Aug. 20, 2008
I thought this was a fine everyday dinner recipe. Very easy. It lacked a little something, but I'll figure that out the next time I make it. I used a very inexpensive cut of beef and it was very tender (Acid from tomatoes) withou having to cook all day or taste like tomato sauce.

Tortillas I

Reviewed: Aug. 20, 2008
After trying another recipe on this site twice, I tried this one as noted by another reviewer. This turned out very, very, good. The previous recipe I tried had way to much fat and the tortillas were flaky like pie crust. I made them a second time reducing the fat by half and they were still flaky (my pie crust should be so good!). When I tried this recipe I was a little worried it wasn't going to have enought fat since it has less than 1/4 the fat as the other one. Well, his was almost perfect. They were just a little tough, so don't know if I worked the dough to much or if it needs a smidge more fat. (Pretty sure it needs a smidge more fat--Of course, I was the only one who noticed they were tough.) Tortillas are very expensive where I live and never fresh, so this is going to make me very popular!! I will give you credit, Esther, of course!

Authentic Mexican Tortillas

Reviewed: Aug. 20, 2008
I've made this recipe twice. The first time exactly as written- they were very flaky and would not stay together once you tried to use them. Obviously to much shortening. I then tried as another reviewer wrote and used 2T fat per cup of flour. They were much better, but still not right. Still a little flaky. I used boiling water, mixed with fork like pie crust then used my hands and found them very easy to make. They did puff as I cooked them once I made thinner ones. I made several dfferent thicknesses - starting with 1/8 inch- Too thick. 1/16 or even thinner worked very well and not difficult to roll out in a circle and transfer to the skillert. I will look for the other recipe referred to in one of the other reviews, or just keep reducing the fat until its right.
