So good!! I didn't measure the zucchini, just shredded a medium sized one. I used 1/2 to 3/4 cup of MINI chocolate chips (the mini work so much better), didn't use any nuts, and replaced the oil with applesauce. They are so yummy, and moist!

These were absolutely delicious! I didn't use the powdered sugar, and I used 3/4 cup of semi-sweet chocolate chips, and 3/4 cup of butterscotch chips. They were so moisty and ooey gooey that they fell apart and couldn't get out of the pan without falling apart. I'll definitely use papers next time. i made these for my neighbors to thank them for helping me and both sets were praising me. I made them three kinds of muffins each and these were by far their favorite. This is definitely a keeper! I can't wait to make these for my husband when he gets home from deployment! EDIT - I've made these a second time! This time I doubled the recipe and added butterscotch chips, dark chocolate chips, and semi-sweet chips. Absolute heaven!

These were exceptional! The only change I made was using 3/4 a cup of water instead of 1/2. I used my kitchenaid as my arms don't work and kneading is no longer possible for me. I was able to make these quickly and with a clingy 16 month old. I reduced the second rise by 15 minutes and let it finish rising in the preheating oven, turned out amazing. So soft! These would make great sandwich rolls too. This is my new go to recipe!

My friend sent me this recipe to try, and to be honest I was a tad skeptical. But these came out amazing! Very light and fluffy, with just a hint of carrot taste. The recipe makes a lot, so I gave half to my neighbors and it still left enough for us to have 2 meals worth with company over. It goes great with beef stew, and roast beef. I'm making some right now for Thanksgiving!
