My cooking triumphs
I cook good stuff all the time, but one thing stands out the most. I was about 8 years old and I was on summer vacation. Never baked a thing in my life but I really wanted some cake. So while my mom was at work that day, I looked through her cookbooks and found a recipe for pineapple upside down cake. I made my dad take me to the store to get all the ingredients. I came home, followed the recipe and the cake turned out perfectly. I couldn't believe it, my parents couldn't believe it...it was great. My mom still brings it up to this day.

There's probably been one or two, but I'm going to plead the 5th on those.

Hawaiian Chicken Kabobs
Wow. Made this tonight for dinner. It was absolutely fantastic. I don't have any sherry, so instead I just used a couple tablespoons of pineapple juice in the marinade. It was so great. I marinated my veggies and chicken separately then used the leftover veggie marinade on the chicken as it cooked. If I could rate higher than 5 stars, I would!

Slow Cooker Chicken Taco Soup
Could NOT be happier with this recipe! Talk about easy! I followed the recipe pretty much to a T but ended up using about 3/4 bottle of Corona and added 1 cup of water with 1tsp of chicken bullion dissolved. Just used a 1oz store bought package of taco seasoning as well. The taste was fantastic! And it's so filling. Looking forward to the left-overs for tomorrow's lunch. This, I think, will become one of my staple dishes!

Virgina's Tuna Salad
Such an easy and quick dish to whip up and it's very good. I added chopped apples to mine. Next time I will add a little bit of onion to it I think.
