Bread Pudding III

Reviewed: Jan. 27, 2010
This recipe is DELICIOUS! All I do differently is add a little more cinnamon, a little more sugar, and I add walnuts and orange zest too. I cooked it for 8 minutes longer than instructed and once it was done I mixed one cup powdered sugar with the juice of one orange and a teaspoon of vanilla to make a glaze to go over it (this really makes it). My family went crazy for it, it's usually gone by the next day. The first time I made it I used a cinnamon raisin bread and it was great, the second time I used a french bread and it was JUST as good if not better. This recipe is a keeper :)

Hashbrown Casserole

Reviewed: Nov. 21, 2009
My mom has been making this for us since I was a kid, only she sauteed a real onion in butter and then melted the soup, sour cream and (a lot of) cheese together in the same pan and then combined that with the hashbrowns. She would also crush up the cornflakes with some melted butter and then sprinkle that on top - more fattening *haha* but absolutely delicious. I've never met anyone who didn't like this recipe, it's definitely one of my favorites.

Zucchini Patties

Reviewed: Aug. 3, 2009
These were pretty good, I'd rate it five stars but mine turned out to be a little too raw in the middle even after cooking them for a while (maybe I made them too thick. I'm not sure if thats how they're supposed to be) but they were still tasty. They remind me of potato pancakes but the zucchini is nice change.

Brooke's Best Bombshell Brownies

Reviewed: Aug. 3, 2009
I've made these brownies probably 4 or 5 times so far and they just seem to be getting better and better. I've lessened the sugar somewhat and added less chocolate chips because it was a little sweet for our taste but these are so good! If you have a sweet tooth or you're a chocolate lover like me, they'll be gone in just a couple days!

Mall Pretzels

Reviewed: Aug. 3, 2009
These were very good! I made the recipe as is and they came out great. I worked on a smaller cutting board surface so I had a little trouble rolling the pretzels out and shaping them, they didn't look too pretty when I put them in the oven but once they were done they had puffed up and looked exactly like the pretzels from the mall. After reading previous reviews about sticking, I used foil on a cookie sheet and greased it pretty liberally with butter -- the pretzels stuck a tiny bit but because of the (yummy) crust on the bottom, with a little patience the foil peeled right off. After they were finished cooking, I brushed some butter on them and then grinded some coarse garlic salt on top. Delicious!

Easy Salsa Meatloaf

Reviewed: Feb. 4, 2009
Yummy. I've made this before but I changed the recipe quite a bit this time because I'm on a diet. Instead of ground beef, I used ground turkey. I also added in mostly fresh salsa (nice chunks of onions and jalapenos in it), and 1 tablespoon pace salsa for more flavor. I grated onion (only a little) and one zucchini then replaced the bread crumbs with finely crumbled whole wheat bread. I used an egg white instead of a whole egg. I didn't expect it to turn out all that great but it was delicious! didn't need any cheese at all. :)

Mushroom Pork Chops

Reviewed: Feb. 4, 2009
This is a great comfort food. My dad and I make this and serve it with mashed potatoes (we use the sauce as gravy). The only differences in our recipe is we caramelize the mushrooms before adding the cream of mushroom soup COMBINED with a can of water. we used boneless lean pork chops, as well. i've never tried onions in it because the roommate hate's them but sometimes i'll add onion powder along with garlic powder for extra flavor. we let the pork simmer for an hour+ or until it's tender and falling apart. it's yummy!
