Teri's Dinner in a Pumpkin

Very good and festive! Mixed reviews from my five kids, but I absolutely LOVED the pumpkin mixed with the meat/rice mixture. We used a soy "meat" because we're veggies. It made a ton!

Pumpkin Pie Pudding

I lightened this recipe by using heart healthy bisquick and fat-fee evaporated milk. I had to double the recipe because of my large family and it was still done at about 4 hours. So delicious! My kids LOVED it!

Pumpkin Casserole

Fantastic! I used whole wheat flour and reduced the sugar to 1/2 cup to make it healthier. My kids said it tasted just like pumpkin pie. We eat this every Halloween. :)

Sweet and Sour Salad

I loved this salad, though I did make some changes. I used only 1/4 cup oil and the rest water. I used 1/3 cup splenda instead of sugar and I added ginger and garlic powder to add some flavor. I left out the butter altogether. I substituted almonds for walnuts. I used cooked broccoli. It was so flavorful and yummy!

Peach Bread

Unbelievably good! I made a few changes: used 2 cups whole wheat flour, 1 cup white flour, used 1 1/2 cups of maple syrup instead of sugar, used 3 1/2 fresh peaches. The bread was tender, moist, and very flavorful. Thank you for this great recipe!

Banana Oatmeal Cookie

These were fantastic!!! I also would not call them "cookies" but maybe muffin tops is more accurate. I made a few changes that made them taste even better. I used half margarine and half peanut butter instead of shortening. I used whole wheat flour and added about 1/4 of a cup of vanilla soymilk to compensate for the whole wheat. Finally, I used 3/4 of a cup of brown sugar instead of white sugar. They were moist, not crumbly, and delicious!!

Curried Coconut Chicken

Sooooo good! I used a can of diced tomatoes instead of stewed and I used a vegetarian "chicken." I added steamed green beans. I realized after I ate it that I forgot to add the sugar, but I loved it anyway!

Venice High School Cherry Butter Cookies

These cookies were awesome. I added mini chocolate chips instead of the nuts. The dough was a little crumbly, but the baked cookies weren't. I baked mine for only 12 minutes and they came out perfectly. My kids said they were the best cookies ever!

Slow Cooker Chicken Taco Soup

I loved it!! This is one of my all-time favorites from allrecipes! I sub'd veggie broth for the beer, and vegetarian crumbles for the chicken. It took about 3 minutes to put together which is fantastic! I served the soup with sour cream and shredded cheddar cheese. Thank you for the recipe!!!
