Superfast Asparagus

Reviewed: Apr. 21, 2011
I had to write a review for this because neither my eleven year old nor my husband really care for asparagus. Well, they ate these up. I did use Caribbean Jerk seasoning instead of Cajun. Absolutely fantastic. When an eleven year old requests asparagus again because "they tasted too good to be a vegetable" the recipe is a keeper! Thanks for the idea.

Spaghetti with Bacon

Reviewed: Nov. 16, 2012
Made this for dinner last night and it was good. Very kid friendly. I added extra salt and a little pepper and topped it with Parmesan cheese. Also, I used dried parsley because I didn't have fresh. Served with steamed broccoli & cauliflower & carrots. Very economical. Will make again.

Chef John's Stuffed Peppers

Reviewed: Sep. 30, 2012
Wow, these were good! I didn't have the hot Italian sausage on hand. What I did have was an 8oz package of Bob Evans breakfast sausage. I mixed that up with my ground beef and other ingridients. I also used more than four peppers so I kept them whole instead of slicing them in half. After they baked I topped them with Sharp Vermont white cheddar. Sooo good. This is the first time I didn't brown my meat before stuffing the peppers. They turned out delicious! Will make them again!

Guinness® Corned Beef

Reviewed: Mar. 18, 2013
Love this! Corned beef and Guinness are the perfect combo! I did keep in the oven for about 4 hours versus the 2 1/2. Mine was only a 3 pounder. I bought a second one while they were on sale. Think I'll try this one in the crock.

Broken Spaghetti Risotto

Reviewed: Mar. 12, 2013
What a great side dish! Yes, I added more chicken broth and cooked it longer than the recipe stated, but it turned out so flavorful! I didn't have fresh parsley. Just used the dried stuff. I also used a little wheat pasta mixed in with the regular. Fantastic! Will be making again and again!

When my kids tell me something is sooo good it rates top with me! So simple to make and very tasty. I don't know if they'll eat their refried beans plain ever again! Thanks for a great recipe!

Stephanie's Freezer Spaghetti Sauce

Reviewed: Aug. 4, 2012
I was overrun with tomatoes and had this recipe suggested to me on the morning buzz. What a great recipe! I cooked the sauce on top of the stove in my dutch oven versus the crockpot. Had plenty of fresh oregano & basill so added those. I simmered the sauce all afternoon, about four hours, on low. It smelled so good! I did freeze the sauce, but I could not wait and pulled the first batch out of the freezer within the week. I browned ground beef, added 2 quart bags of the sauce, and two small cans of tomato paste. Simmered all for about forty minutes or so. Delish! Thanks for a great recipe and an excellent way to use up plentiful garden tomatoes :)

Flatlander Chili

Reviewed: Jan. 4, 2013
This is such a good chili recipe. I think it's the first time I've made chili without using some type of canned tomatoes but just tomato juice and tomato sauce. I followed the recipe to a T and it was absolutely delicious! Definitely will make again!

Home-Style Scalloped Potatoes

Reviewed: Apr. 26, 2012
Loved these potatoes. You must make sure you let your sauce thicken before adding to the potatoes. Also, after I thinly sliced my potatoes I microwaved them with a small amount of water for about 4 minutes. Drained the water and continued on with the recipe. My kids and hubby raved over them. I'm sure they will request these again soon!

Amazing 'Pizza' Pork Chops

Reviewed: Aug. 24, 2012
It's "Amazing" that a recipe so simple is so fabulous! My entire family loves these chops. The fresh tomato slice on top with the herbs and cheese makes these chops so scrumptous. I live in a house with people who don't appreciate a fresh tomato. I have to sneak them in on them. Well there's never a complaint when they are sliced and placed on top of these chops. Also, a plus is the easy clean up with using the foil. Forever greatful CNM catering for such an easy and delicious meal!

An Authentic Spaghetti alla Carbonara

Reviewed: Apr. 26, 2012
Another delicious dinner from Don! I live in a small country town and could not find pancetta. I used canadian bacon instead and was still delicious. Very economical , yet elegant, weekday dinner for my family. Thanks for another go-to recipe!

Caribbean Chicken Salad

Reviewed: May 13, 2011
Delicious honey mustard dressing. I say this because I have a twelve-year-old boy who refuses to put salad dressing on his salads. I went ahead and added this dressing on his salad and he told me he loved it. The homemade salsa was a good addition also. Left out the pineapple, but added a little parmesan and avocado. The whole family enjoyed it. This one's a keeper!

Sausage Pasta

Reviewed: Jan. 8, 2015
Super for a weeknight meal! Used a can of diced tomatoes versus the fresh and about a cup of shredded sharp cheddar cheese. Also added garlic salt, garlic powder, basil & oregano. It seemed a little dry sitting in the pot so added about a cup of chicken stock and let that soak in. Yummy busy night meal :)

Baked Chicken and Zucchini

Reviewed: Aug. 19, 2014
What a great recipe for garden fresh zukes & tomatoes! I used panko on my chicken because that's all I had. The chicken turned out perfectly cooked, nice and moist. I doubled the garlic and added salt to the zucchini when stir frying it. Also, I subbed Monterey Jack for the mozzarella. I was low on ingredients at home and this recipe stood up to all my alterations! Thank you, Luaucow!

Hoisin Grilled Chicken

Reviewed: Jul. 9, 2014
This was so good! I had a jar of hoisin in the fridge leftover from some other recipe. I will now be purchasing hoisin again just to make this recipe! I was a little lazy and used dried garlic, ginger, and onion powder and just mixed it in a little bowl along with the other ingredients. I finely chopped about 3 jalapeno rings and it gave it the perfect pop. This made plenty of sauce for a large family pack of chicken legs. Even my picky 11-year-old loved it, so it's a winner in my book! Thanks Semigourmet!

Ham Tetrazzini

Reviewed: Dec. 28, 2013
This is so good! Had leftover ham from Christmas to use and I'm glad I chose this recipe to use it! Turned out very creamy and comforting. I followed the recipe as is except for adding the pimentos. Didn't have them on hand. This got excellent reviews from my kids, so this is a keeper!

Nana's Squash Casserole

Reviewed: Sep. 17, 2013
I loved this! Even my non squash eating 14-year-old loved it! I followed the recipe pretty much. I only had a 10 3/4 oz can of cream of chicken and I ommitted the sage. Also, instead of boiling my squash I just microwaved it for about six minutes. Loved it and will be making it again. Thanks for a great recipe :)

Southern-Style Crowder Peas

Reviewed: Sep. 7, 2012
Love crowder peas! I had to make a few changes because I didn't have everything on hand. No bacon or ham so I used smoked sausage. I browned that first with my onion and fresh garlic. Didn't have green pepper so I subbed in a 14oz can of chopped tomatoes with green chilies. I also added a 14oz can of chicken broth along with added water. Was also out of thyme. Will try that next time. So I added a Herb ox low sodium chicken bouillon packet and I did have the bay leaf, but I didn't crush that. Just kept that whole. The peas turned out wonderful! Definitely making again :)
