About this Cook
I have been gluten-free for five years and feel fantastic. I love modifying recipes to create gluten-free masterpieces. My family and friends enjoy all the gluten-free goodies and can't believe they are gluten-free!
My favorite things to cook
Anything healthy with vegetables and fruits that are in season. I have an organic garden and create meals using what I grow myself.

Caesar Salad Supreme
I only made the dressing and it was WONDERFUL! I added 2 extra anchovy fillets for a total of 7 in the dressing, added NO salt and a little freshly ground black pepper. This dressing is easy to make and so much better than the bottled dressing. I will use this from now on. You can't go wrong!

Peppermint Patties
It took forever for the patties to "dry" and you really need to use parchment paper because they stick to the wax paper. They had to dry overnight and then the chocolate mixture was too thick. I thinned it a little bit but they were still falling apart and I have no idea if they will ever set up without having to keep them stored in the freezer. What good is that? I read the "what to drink" suggestions at the side and think you should skip making the candy and just drink the port!

Fresh Blueberry Pie I
This recipe was a big disappointment and waste of 4 cups of fresh blueberries. I followed the recipe and the filling was soggy and runny. I would NOT recommend it to anyone. I will use it as an ice cream topping since it's a runny mess. I even doubled the tapioca and it still didn't set up.
