I have made this recipe before and love it! I like that it doesn't have spices in it and the banana flavor shines through. Tonight, though, I tried something different! Once my frozen bananas thawed, I drained the liquid that comes out of them and then reduced it on the stove-top to about half the volume; after it cooled completely, I added it at the same step as the mashed bananas. Oh my, the flavor is even better! This is really a great recipe as written and it comes out of the oven looking and tasting wonderful. Crispy outside and moist inside.
