Mexi-Italian Salsa

This is now my favorite salsa. The addition of the artichokes really enhanced it. I did not have lemon juice but I had fresh lime juice and used fresh lime basil [that I had found at a greenhouse]. I also used a couple of fresh hot peppers. I put it on top of a cheese omelot. Wonderful!!!

Avocado-Egg Salad Tostada Filling

This was great for lunch. Lots of flavor. Next time I won't mash the avocado as I would prefer to have more of a solid consistancy.

Cajun Potato Latkes

Loved these! I defrosted frozen shredded hash browns in the microwave for a quick fix. I added 3 cloves of minced garlic and I used olive oil, as that is the only oil I keep in the house.

Slow Cooker Parsley Chicken

This was really good. It ended up turning out like a stew, as the chicken and potatoes fell apart after cooking for 8 hours. I ended up serving the left overs over rice and that was just wonderful! I will be making this again!

Mango-Lime Rice

Zucchini Bread

I loved this. I didn't use chocolate, but used raisins instead. I also used low-fat vanilla yogurt instead of the sour cream. Came out light like a cake. Will definitely be making this again.

Zucchini Slice

This was very good. I added 4 slices of bacon, 4 cloves of garlic, and 1 cup of mexican blend cheese. Turned out very light and fluffy. Great use for zucchini!
