Butter Pecan Cookies

Very light, flakey and tasty! Easily fall apart. Next time I'm going to add an egg and see what happens :)

I used Pam instead of Olive Oil, and after the onions were translucent I added the Anaheim Chilis to soften them. The mixture was way too thick for me to puree it in my tiny food processor so I added triple the amount of water and a cup of unsweetened apple sauce because that's what I had in the pantry. Turned out delicious. The next morning I cooked it into a potato pancake shape - it was sweet, spicy, and really filling (not to mention, healthy)!

Thai Style Shrimp

This was so delicious and easy to make! I doubled the amount of basil and garlic because we love those flavors, but otherwise followed the recipe as directed. I served it over a bed of jasmine rice, the timing of this was perfect! (start cooking onions when you cover & reduce heat on rice) Will definitely make this again!

BBQ Pork for Sandwiches

I didn't have a can of beef broth, so I crushed 2 beef bouillon cubes and added water. I chose to use a honey BBQ sauce and it was delicious! My meat-loving boyfriend was done with his first serving before I was able to sit down! We used this on sandwiches for the following few days. It was also great to come home to smell dinner ready after a long Monday at work. Will use again!

Apple Glazed Pork Chops

This recipe was super easy and good comfort food! It was lacking in flavor....not sure how to improve it, but it was kind of bland. My boyfriend loved it, I am open for suggestions on any improvement (I don't use pork much) :)

Absolutely Amazing Ahi

If you love ahi and avocado, you will LOVE this dish as much as I do! Made it exactly as the recipe called for - couldn't think of a SINGLE improvement on the recipe - FABULOUS!

Connie's Zucchini "Crab" Cakes

SUPER EASY to make with little mess! I didn't dry the zucchini off, but I did buy all organic local produce and breadcrumbs and it's never very cold here in California - not sure if that had anything to do with it. They were a little bit bland, next time I might try adding a little garlic or extra onion.

Cabbage Fat-Burning Soup

Hearty healthy choice for lunch or dinner! I made the full batch exactly like the recipe and added different spices (like cayenne, garlic, cumin, garam masala, etc) each time before I heated up a serving. It kept it interesting and I didn't get bored eating the same thing so much!

Baked Salmon II

I was in a hurry so I bought the salmon at Trader Joe's and defrosted 1/2 way. Marinated until it defrosted (about 1/2 the time) in powdered garlic, onion powder, salt, pepper, and fresh squeezed lemon juice of one lemon. I baked for 35 min, but thing 30 would have been *perfect*. Super easy, delicious, and healthy- will make again!

Slow Cooker Turkey Breast
