About this Cook
I grew up on home-cooked meals and learned my way around the kitchen quickly. I enjoy eating more healthy than generations before mine, but still have a weakness for anything cooked in butter.
My favorite things to cook
Fish, chicken, and vegetables for me. I recently found out that I am allergic to milk, eggs, peanuts, and walnuts which has been challenging. Thank goodness for vegan cooking websites and Jimbo's!
My favorite family cooking traditions
Paella! My mom's half of the family is from Spain and it is one of my favorite dishes. Grandma's mashed potatoes and her chicken soup is TO DIE FOR

Mangu
I used Pam instead of Olive Oil, and after the onions were translucent I added the Anaheim Chilis to soften them. The mixture was way too thick for me to puree it in my tiny food processor so I added triple the amount of water and a cup of unsweetened apple sauce because that's what I had in the pantry. Turned out delicious. The next morning I cooked it into a potato pancake shape - it was sweet, spicy, and really filling (not to mention, healthy)!

Thai Style Shrimp
This was so delicious and easy to make! I doubled the amount of basil and garlic because we love those flavors, but otherwise followed the recipe as directed. I served it over a bed of jasmine rice, the timing of this was perfect! (start cooking onions when you cover & reduce heat on rice) Will definitely make this again!

BBQ Pork for Sandwiches
I didn't have a can of beef broth, so I crushed 2 beef bouillon cubes and added water. I chose to use a honey BBQ sauce and it was delicious! My meat-loving boyfriend was done with his first serving before I was able to sit down! We used this on sandwiches for the following few days. It was also great to come home to smell dinner ready after a long Monday at work. Will use again!
