Spinach-Green Bean Casserole

Reviewed: Apr. 17, 2012
Very good! Nice change of pace from classic green bean casserole. I used frozen green beans and frozen spinach (both thawed) because that is what I had. Keeper.

These are good in a pinch and you don't have much time. I didn't get much raise out of them.

Creamy Ham and Beans

Reviewed: Apr. 17, 2012
Without a doubt this is the best bean (soup) we have ever had. Definitely soak the beans overnight or at least all day. I used 8 cups of chicken broth instead of the water and 1 pound of soaked beans. I put that on the stove and brought them to a boil and then turned them down to a simmer. About an hour later, I added my onions and ham...maybe about 2 to 2 1/2 cups of ham (what was left from easter after sandwiches). Returned to a simmer until done...about another 1 1/2 hours. I then added 2 cans of the soup and 8 ounces of Velveeta and about 1 1/2 cups more chicken broth for the soupiness we like. It was amazing. I am sure it would be good just as written...just thought I'd share what had my family saying "OMG that was good" all evening.

Mom's Best Macaroni Salad

Reviewed: Jul. 23, 2009
I have made this twice and we both absolutely love it. I made it as written the first time and the second time with 1/3 cup of sugar. It is sweeter than most macaroni salads but that is what we like about it, that it is different, that it stands out. It is very good, very colorful and pretty and will be "my" macaroni salad from now on. Thank you for the recipe.

Asian Salmon

Reviewed: Dec. 11, 2008
My husband gave this a 5. I would give it a 4. The vinegar flavor was strong to me. I do really like vinegar but it seamed overpowering. I tripled the sauce because I am a sauce person and the amount of sauce was perfect. I also added about 1 1/2 teaspoons of powdered ginger (because I didn't have any fresh). I halved the oil before I tripled based on other reviews. I agree that the sauce was not oily but I wonder if the oil would have made it less vinegary tasting to me. I baked for 20 minutes and broiled for 5 minutes. I wasn't sure if the "minced" onion was to be fresh onion or dry. I used dry. Next time I will use fresh or probably green onions as we really love them. My husband loved it...it's a 5.

Green Bean Stir-Fry

Reviewed: Dec. 11, 2008
Yum! My husband and I both loved this recipe. I doubled the sauce because I am a sauce person. I boiled the beans for 2 minutes before stir frying them because my husband prefers softer beans. If you are worried about the Peanut Butter in them...don't. It is an amazing flavor.

Best Grilled Margarita Chicken... Ever!

Reviewed: Nov. 2, 2008
OMG good! I didn't change a thing. I marinated for 24 hours and I used a whole chicken cut up instead of breasts. I served with Carib Black Bean Soup recipe I found on this sight. What a great meal. The flavors complimented each other so well. My husband said he didn't want chicken any other way again...but we all know that can't be!!! I love new recipes and this is definitly one of my new favorites.

Carib Black Bean Soup

Reviewed: Nov. 2, 2008
I served this with a lump of steamed rice in the middle of the bowl and with the Best... Grilled Margarita Chicken...Ever! recipe I found on this sight. What an amazing meal. The flavors went so well together. I took the advice of other reviewers and left the water out of the soup. I also only pureed half the soup. I had planned on putting in the vinegar but after tasting it(more than once...it was soooo good!) I just couldn't put it in. It was so amazing without it I would have cried if I didn't like the vinegar flavor added in. My husband couldn't stop raving about how good it was through the entire meal. Thank you!

Broiled Tilapia Parmesan

Reviewed: Aug. 27, 2008
I'm new here (and loving it I might add). I read a lot of the reviews on this before making it and took the advice of the "pros". I added extra spices and the bread crumbs. The taste was extremely good. I was worried that it wouldn't taste enough like fish for my husband...who is a major fish lover but it did. However I think I might use less than 1/2 a cup of bread crumbs next time. The topping was like a paste putting it on. It tasted great but was really hard to spread on top and so I had to clump it on as to not tear the fish fillets. All and all this will be a regular in this household. Yum.

Bacon and Balsamic Glazed Sugar Snap Peas

This is amazing...as is. As a warning however, I love just plain steamed snap peas...I'm not sure I can go back to the healthy version now.

My Kid's Favorite Pork Chops

Reviewed: Aug. 27, 2008
My husband and I really liked these chops. I don't know if we will use steak seasoning next time we make them. I don't know that we like it with pork that much. We minced and added 4 cloves of garlic to the sauce because we really like garlic. I didn't have anything but lime beer but it was really good. Oh and I probably wouldn't cook them for 2 hours next time. I didn't plan on it this time but time got away from me. I would shoot for 1 1/2 hours. This recipe is definitely added to my cookbook :-)
