Spicy Sausage Ragu

Phenomenal!! I made this with Chef John's recipe for tomato sauce and it just could not have been better. I did not have spicy sausage so I added some red pepper flakes and also some cayenne for good measure. Served with rigatoni. We loved it. I think that 1/4 cup of cream takes it over the top.

No Knead Beer Bread

This is one of those recipes that I walked around for 3 hours after dinner saying...hey did you know I made that bread from scratch?!? I am a mess in the kitchen when it comes to bread. Through the whole process I said to myself this is gonna be a flop but omigosh it was sooo good. Nice crust, spongy inside. I've never made better bread and it is right up there with the best of them. Weeeeeee!

Beef and Guinness® Stew

This was really good and I'm not even a stew person. It had me at beer. The beer does it for sure. I needed to add some cornstarch to thicken it up some more to my liking but other than that I followed to a T.

Quick and Easy Parmesan Noodles

This was really rather good. I halved the recipe and put in 1/2 of cup of frozen peas and minced garlic with the cream. I cooked the pasta 1 minute less than normal, drained and added the sauce mixture with the cheese, covered and let it sit for 2 minutes covered. I used asiago cheese as that is what I had and used 3 ounces...2 would have been fine.

Parmesan Roasted Acorn Squash

This is as good as acorn squash gets. I used asiago as that is what I had on hand. It did not take near 30 minutes to get soft but then I think I sliced my squash thinner. I was worried about it because it looked like the cheese burned but it added a nice crunch to the tender squash. I have never had acorn squash that wasn't sweet, I'm not a sweets person...so I'm ecstatic to have found this recipe. Who knew the skin was edible! Thank you so much for sharing.

Pork Chops Stuffed with Smoked Gouda and Bacon

This was just ok for us. We weren't crazy about the bacon/gouda in our pork chops. I thought we would. I had high hopes but it just wasn't for us. Thank you for your recipe.

Shrimp Quesadillas

Pretty darn good. I only used 1/2 a lime and cooked them on my griddle without oil as that is always how I cook my quesadillas. I think a teaspoon of salt was too much and will probably use 1/2 a teaspoon next time.

Chef John's Coq Au Vin

I wish I had leftovers. This was sooooo good!! The sauce was incredible. The chicken was melt in your mouth. It was just a party going on in your mouth all the way around. So easy but so fancy. Chef John you are my hero, you make me look good! I made EXACTLY as written. I have wine left and I'd rather make this again than drink it...that says a lot. You have to serve it with mashed potatoes. I think it is against the law not to.

Crispy Pork Cutlets

The pickles make this dish. And the breading on the pork. It was just fantastic. Don't be afraid to try the pickles. I wouldn't make it again without them. How awesome would this be with fish, same coating technique and same sauce......Another winner!!

Grilled Cheese Sandwich

I was going to make grilled cheese with onion and bacon tonight with some leftover chili and for s**t's and giggles thought I would see what was out there. I just had to laugh at this recipe and spent 15 minutes looking at reviews. That is 15 minutes I'll never get back....thought I'd add to it AND I think I will try the mayo thing to boot.

Washabinaros Chili

I tried this because we love wasabi! I added about 1/2 a pound of stew meat in with the sausage and ground beef. I didn't have habanero so I substituted a jalapeno. I used 3 different types of beans; kidney, black and chili. My beer was Guinness. It was delicious!! I always drain and rinse my beans (with the exception of chili beans) but I was still leery about it being too thin based on other reviews. However, I left the lid off for the last 45 minutes and the consistency was perfect. Now I have found two chili recipes on this site that it will be difficult to choose between. Woe is me.

Ricotta and Spinach Tortelloni with Creamy Parmigiano Sauce, Kale and Pine Nuts

We really did not like this. My husband wouldn't even eat it. Very disappointing. Way too much cream for 8 ounces of tortellini. The garlic added first was just waiting to be burned cooking with the kale for 3 to 4 minutes. The cream never really thickened up. I just really didn't like it at all.

How to Make Homemade Pizza Sauce

This was awesome sauce. I thought I would have to add more sugar but for some reason I think the baking soda really did take out that acidic taste. Amazing. I could NOT find fresh oregano...so sadly I used 2 teaspoon of dry. It was still good but I can't wait to make it with fresh. I did use anchovy fillets but I might try paste next time for convenience and see if I notice. This is now MY traditional pizza sauce.

Easy Honey Mustard Mozzarella Chicken

Why didn't I think of this. My husband loved loved loved it.....but it did have bacon on it. Like the video shows I pre-cooked the bacon in the microwave for a couple minutes to give it a head start and it cooked perfectly in the final 10 minutes with the cheese. I just used bottled honey mustard as I have some I want to use up. I seasoned the chicken with my favorite seasonings as we are not crazy about lemon pepper. I felt the chicken was a tad overcooked, not deal breaker overcooked, just a tad so I might adjust the cooking times next time...and there will be a next time. It's just so easy and tasty!

Bok Choy Steamed Rice

This was very good and a nice change from the plain ole rice side. I found it needed at least twice the amount of soy sauce if not more. I probably ended up with almost a tablespoon in there and my husband was still reaching for the salt. It cooked up perfectly with the times stated.

Chef John's Monte Cristo Benedict

This was good....ok really. We ate every bite but I'm not sure I would make it again. We didn't really particularly care for the way the flavors meshed. It is so simple to make for a beautiful presentation and it could just be our palettes. I encourage people to try it because the idea of it all is quite awesome.

Cinco de Mayo Salsa Cruda

Not your average "salsa". It is crisp and clean and citrus-y with some heat. It is exactly what Chef John says....addictive. At first I thought there was too much lime but then as you eat you look forward to it. A 1/2 bunch of cilantro is left up to the cooks discretion as all bunches are different sizes. I put a tad too much in ours but it doesn't make it a deal breaker. I plan to serve mine with chips...yes...but also carne asada tacos. Can't wait.

Avocado and Tomato Salad

I found this to be just OK. I wasn't fond of the textures going on. It might be better if you just serve the salad with the dressing on the side and drizzle it on right before eating...for us anyway.
