Enchiladas Suizas

So so good. Restaurant quality for sure. I took other reviewers' advice on upping the cumin, doubling the sauce, adding some garlic powder, frying tortillas in cooking spray, adding some sauce to the bottom of the pan, adding some sauce in with the shredded chicken before rolling the enchiladas, more cheese and mixing the cream with the remaining sauce before pouring it over top. All good recommendations. Would the recipe be a 5 star without these recommendations...probably but thank you everyone for your input because it was delicious!! My only change this time was to add a tablespoon of cornstarch to the sauce to make it thicker. Next time I will not be hesitant to fry the tortillas a tad longer and I will try using half and half instead of cream. So happy to have found this recipe.

Noodles Alfredo

We really liked this. The only change I made was to use 2 teaspoons of parsley instead of a tablespoon because that seamed like a lot to me. It was really saucy and not that there is anything wrong with that but it could probably work with 12 ounces of pasta just fine. A definite keeper!

Rusty Chicken Thighs

The flavor of this chicken is amazing. I doubled the marinade because that is something I would do. I'm not sure that I needed to but it was so perfect the way I made it that I will probably always do it. It isn't spicy and it isn't sweet. It doesn't taste like soy sauce or mayo. it is just a unique flavor of everything combined. We loved it.

Beef Bourguignon II

This could be a five star. I think. The flavor was there but the beef cubes were way over cooked. Tender......well yes ....but very dry! It smelled amazing cooking. The flavor was there but it wasn't a "WOW" flavor for me. My family liked it even after agreeing it was a little over cooked. I tried the recipe because I had half a bottle of wine leftover from making Chef John's Coq au vin (which I make all the time) and didn't want it to go to waste. I'm not sure if I will try this again but I'm giving it a 4 based on what it could be and that my family enjoyed it.

Broccoli Slaw

This was rather good. I've never tried the broccoli slaw. My husband didn't even know it was broccoli until I told him. I only bought a 12 oz bag. I added about 3/4 cup of pistachios and a little less than 1/2 a cup of craisins. I just added cole slaw dressing until it looked good - about half a 12oz bottle of Marie's original cole slaw dressing. I will make this again.

Tomato Soup

The worcestershire sauce made it inedible. This could be my fault as maybe vegetarian worcestershire isn't the same; as in completely different?? If I'd had the hindsight to leave out the worcestershire it might have been a 3 as written. It needs to be pureed or some rounds in the pan with an immersion blender and personal preference it needs some heavy cream to make it creamy or otherwise with the ingredients left, you have a generic pasta sauce.

Spicy Sausage Ragu

Phenomenal!! I made this with Chef John's recipe for tomato sauce and it just could not have been better. I did not have spicy sausage so I added some red pepper flakes and also some cayenne for good measure. Served with rigatoni. We loved it. I think that 1/4 cup of cream takes it over the top.

No Knead Beer Bread

This is one of those recipes that I walked around for 3 hours after dinner saying...hey did you know I made that bread from scratch?!? I am a mess in the kitchen when it comes to bread. Through the whole process I said to myself this is gonna be a flop but omigosh it was sooo good. Nice crust, spongy inside. I've never made better bread and it is right up there with the best of them. Weeeeeee!

Beef and Guinness® Stew

This was really good and I'm not even a stew person. It had me at beer. The beer does it for sure. I needed to add some cornstarch to thicken it up some more to my liking but other than that I followed to a T.

Quick and Easy Parmesan Noodles

This was really rather good. I halved the recipe and put in 1/2 of cup of frozen peas and minced garlic with the cream. I cooked the pasta 1 minute less than normal, drained and added the sauce mixture with the cheese, covered and let it sit for 2 minutes covered. I used asiago cheese as that is what I had and used 3 ounces...2 would have been fine.

Parmesan Roasted Acorn Squash

This is as good as acorn squash gets. I used asiago as that is what I had on hand. It did not take near 30 minutes to get soft but then I think I sliced my squash thinner. I was worried about it because it looked like the cheese burned but it added a nice crunch to the tender squash. I have never had acorn squash that wasn't sweet, I'm not a sweets person...so I'm ecstatic to have found this recipe. Who knew the skin was edible! Thank you so much for sharing.

Pork Chops Stuffed with Smoked Gouda and Bacon

Shrimp Quesadillas

Pretty darn good. I only used 1/2 a lime and cooked them on my griddle without oil as that is always how I cook my quesadillas. I think a teaspoon of salt was too much and will probably use 1/2 a teaspoon next time.

Chef John's Coq Au Vin

I wish I had leftovers. This was sooooo good!! The sauce was incredible. The chicken was melt in your mouth. It was just a party going on in your mouth all the way around. So easy but so fancy. Chef John you are my hero, you make me look good! I made EXACTLY as written. I have wine left and I'd rather make this again than drink it...that says a lot. You have to serve it with mashed potatoes. I think it is against the law not to.

Creamed Spinach

This is very good. The sauce gets really really thick, I had to thin it a little bit with more milk but it was extremely tasty and creamy. I made half a recipe with 10 ounces of spinach as that is what I had.

Crispy Pork Cutlets

The pickles make this dish. And the breading on the pork. It was just fantastic. Don't be afraid to try the pickles. I wouldn't make it again without them. How awesome would this be with fish, same coating technique and same sauce......Another winner!!

Grilled Cheese Sandwich

I was going to make grilled cheese with onion and bacon tonight with some leftover chili and for s**t's and giggles thought I would see what was out there. I just had to laugh at this recipe and spent 15 minutes looking at reviews. That is 15 minutes I'll never get back....thought I'd add to it AND I think I will try the mayo thing to boot.
