Crawfish Chowder

Good recipe, but almost too rich. I added in about 1/3 cup of regular milk so it wouldn't be so thick.

Easy OREO Truffles

I added in a tsp. of vanilla extract to the cookie/cream cheese mixture, and dipped the chilled truffles in almond bark (white). Family likes them, but to me, they just taste like a plain old Oreo.

Double Layer Pumpkin Pie

I give this a 4 as written, but I give my version a 5. have made it the regular way, using 3/4 c. of milk and it's perfect. I use a large graham cracker crust and sprinkle finely cut, toasted pecans over the crust. For the spices I use cinnamon, cloves, and nutmeg - no ginger. I also add in about 1/2 tsp. of vanilla extract to the pumpkin mixture. Now.... I have also made this almost sugar free. BLT Pasta Salad

This is a wonderful recipe that I have made at least 20 times since discovering the recipe a few years ago. It is a huge hit for picnics, BBQs, office parties, holiday meals, etc. My family loves this! Matter of fact, I've never met anyone who didn't like this recipe - get requests for the recipe all the time. My family does not, however, care for bottled light ranch dressing in this recipe, so I make up my own ranch from the little pouch. I also use a 12 oz. pkg. of bacon rather than 16 oz. - it's still plenty, and saves money. I sometimes add in some finely chopped bell pepper and celery if I have it, and have used green or red onions in place of yellow onions - just use what I have on hand.

Brownie Chocolate Chip Cheesecake

Delicious and easy! I made this for Father's Day weekend. Took other's advice and used Ghiradelli brownie mix (which I normally use when I use a mix). Better made a day in advance.

Sausage Stuffed Mushrooms II

Good, but a little bland as written. I did taste the filling first and then added chopped green onion, parmesan cheese, black pepper, and a little fresh garlic. Baked rather than broil.

This has a good flavor, but it salty, and that is w/o the black olives (didn't have those). I can't imgine how salty this would be with the addition of the olives. I wonder if using 1/2 pkg. of the ranch would work

Classic ANGEL FLAKE Coconut Cake

This cake is just delicious - it's a huge hit everytime I make it! I also love that it is so easy to make, and that I always have the ingredients on hand. I make it in 3 layers rather than 2, and I use the larger size pudding with a tick less than 1/2 c. extra milk (I use whole milk for the pudding and extra creamy whipped topping). I leave everything else the same. Best made two days in advance.

The Best Potato Salad

This is a very good potato salad. My normal potato salad is basically this one minus the optional ingredients (and I use Italian dressing in place of ranch). I made this yesterday, and my family loved it. I would recommend cutting the salt back some. I used 1 tsp. rather than 1 1/2 tsp. The only change I made was to leave out the black olives as my family does not care for them. As others have said, this is much better the next day. Next time, I will add some crisp cooked bacon.

Fasoliyyeh Bi Z-Zayt (Syrian Green Beans with Olive Oil)

This recipe is a different, delicious way to prepare green beans. I make these two or three times a month, and make them often for holiday meals. I do not use cilantro in the recipe, as my family does not care for it. I do add in about 1/4 tsp. of black pepper. YUM!

Coconut Poke Cake

I use yellow cake mix for this recipe and sub. whole milk for the water called for on the cake mix box (I do this with all cake mixes). I also add in a tsp. of vanilla extract and 1/2 tsp. of butter extract to the batter. Cake is very moist and delicious - much better made a day or two in advance and chilled until serving time. Cream of coconut is located beside the alcholoic drink mixes at my supermarket.

Creamy Lemon Cake

Everyone really liked this cake; especially the frosting part. Very easy, foolproof, and I will make again. I used extra creamy whipped topping. It was a big hit and a few asked for the recipe.

Super-Easy Rocky Road Fudge

The original recipe, I would give a 4, but my way, I'd give a 5. I use half semi-sweet chocolate chips and half milk chocolate chips. I also make in a 9x9 pan so it's thicker. VERY easy and good.

Key Lime Pie VIII

Very good, but better w/ some changes. I made it the 2nd time with 3/4 cup of fresh lime juice and only 2 tsp. of lime zest - I also used a bought graham cracker crust. Much better, IMO. We like to eat it frozen - very refreshing on a hot day.

Coconut Pound Cake

Mine was okay, but a little too "eggy" and not moist. It wasn't dense like most pound cakes - it was fluffier like a mix between a pound cake and an angel food cake.
