Ham Chowder

Reviewed: Nov. 3, 2011
This was really good albeit a bit salty. Did not use country ham but leftover baked ham. Didn't have the leeks and green onions but it was still delicious although a bit salty. Next time I'd like to follow the recipe exactly but use low sodium chicken broth.

Chicken Tortilla Soup II

Reviewed: Dec. 15, 2010
Great, easy soup! Everyone loves it. I've made it several times exactly as stated but added frozen corn and black beans the last time just to make it go further and to make it a more complete meal. Adding the corn tortillas at the beginning is a bix part of the texture of the soup and I wouldn't omit this step. Just add some crunchy ones to each bowl if you like that contrast. Thanks.

Jalapeno Popper Spread

Reviewed: Nov. 21, 2010
I've made this twice now-once following the recipe exactly and the second time with some minor changes: double the quantities of jalapenos (I used canned) and mixed the parmesan with an equal amount of panko as some other reviewers suggested. Much better the second time! I think it also best when cooked in a wide shallow dish so that there is lots of crunchy, cheesy topping. Big hit with my friends!

Blueberry Strata

Reviewed: Nov. 9, 2010
Just sampled this hot out of the oven. Oh my! Love it! Just sweet enough and the texture, due to the cream cheese, was awesome. We made a half recipe but used 3 tablespoons of maple syrup and maybe 5-6 oz of cream cheese. We had to add water to the syrup to thin it when we reheated this morning. Thanks for a great recipe.

Honey Baked Chicken II

I expected to love this but didn't like it at all. A young neighbor, however, loved it. Different strokes!

Baked Salmon Fillets Dijon

Reviewed: Sep. 18, 2010
I just did a three-way taste tests between this recipe and the ones for Salmon with Lemon and Dill and the Lemon Rosemary Salmon from this site and this one pleased my taste buds the most. Thanks for the recipe.

Slow Cooker Creamed Corn

Reviewed: Aug. 23, 2009
Hmmm....this sounded great. However, I followed the recipe exactly but none of the four of us really liked it. It just seemed to add calories and fat grams without adding anything in the flavor department. And the slow-cooked corn was gummy and chewy. Maybe I'm just a corn purist!

My Kid's Favorite Pork Chops

Reviewed: Aug. 23, 2009
This was very tender but the flavor was just okay. The flavor is very dependent on which steak seasoning, beer, and bbq sauce you use. My combo was just okay. Will try again with different seasoning because we loved the ease of the technique and the tender result.

Play Dough Cookies

Reviewed: Jul. 13, 2009
These were good tasting but not sweet enough for my taste. Next time I'll add more sugar and more extract or just use the idea with another sugar cookie recipe. They are definitely fun to make and cute looking. My 11 year old neighbor, sister-in-law, and I made them yesterday and had a great time. We started out with four colors but ran out of two before we were done. Next time (and there will be a next time) I'll portion the dough out more equally and chill the dough both before and after forming the balls.

Baked Potato Soup

It may have been something I did but this didn't work for me. The baked potato flavor was not dominant.

Corn and Crab Bisque

Reviewed: Sep. 28, 2008
Wow! Just finished my first bowl and it is delicious. My variations: added one drained can of corn along with the onions and cooked both to a light carmelized stage. After removing the cup of broth for the food processor, I added a can of creamed corn. Used all half and half and no milk and upped the amount of flour to 4-5 tablespoons. Oh, and used creole seasoning. I still don't know if that is different from Cajun seasoning but it worked great! Going for bowl #2 now. Thanks for a great recipe.

Teriyaki Salmon

Reviewed: Sep. 18, 2008
I made this for dinner last night and thought it was good but had it chilled for lunch today and it was wonderful! It was especially good in contrast to the steamed chilled sugar snap peas also leftover from last night and the pairing made a nice luncheon salad. Making the whole thing super easy and convenient, I froze individual servings of salmon with marinade in freezer bags, defrosted one all day in the fridge yesterday, and then broiled as directed. I microwave steamed the frozen sugar snap peas after I started broiling the salmon so the whole meal (with a chunk of crusty bread) took about six minutes from start to finish. That is my kind of cooking- healthy, quick, delicious!

Zesty Slow Cooker Chicken Barbecue

Reviewed: Aug. 31, 2008
My favorite kind of recipe- super quick! My brother, his three kids, and I all thought this was really tasty. At others' suggestion I used the Jack Daniel bbq sauce, a few dashes of Liquid Smoke, and a few shakes of Cayenne. The prep took less than five minutes. I wouldn't say it is "the best" but will definitely make it again and again because it is a perfect combo of easy and tasty. Thanks.

Brown Sugar Meatloaf

Reviewed: Aug. 23, 2008
Excellent! This is the only meatloaf I've actually LOVED. I did use ground pork for one third of the meat, added Worcestershire to the glaze mix and put it on top instead of the bottom. Absolutely love it! In fact, I think I'll go have another piece right now....
