Spinach and Orzo Salad

Excellent! I used fresh basil, added a couple tomatoes, and didn't use quite the whole bag of spinach. I also only used about 1/4 cup pine nuts and the rest walnuts because I'm cheap. :)

Chewy Chocolate Chip Oatmeal Cookies

These were good, but mine only needed 10 minutes. They were burnt at 12, but maybe it's just my oven. It's best to take cookies out when they're puffy and look like they might be slightly underdone. I did add an extra 1/4 cup of flour, doubled the soda, and halved the salt. I'm not sure that these modifications really make a whole lot of difference, except for maybe the soda. The original recipe is probably fine, though if I were to make these again, I would add some extra chocolate chips.

Minnesota Wild Rice Soup

I really wanted to like this soup, but it was just kind of blah, and I think it's because of all the flour. I've made a roux-based soup before, and it was pretty good, but I think it's because it had tomatoes in it. This soup is edible, but if I were to make it again, I would maybe add tomatoes or thicken it with tomato paste or mashed potato flakes or maybe use cream of mushroom soup. I did add some dried parsley and thyme, which helped a little with the flavor, and also added a little corn.

Mango Guacamole

Oooh, this was tasty! Made exactly as written except just mashed the avocados with a fork because I like the texture better that way.

Black Bean Vegetable Soup

I have made this soup several times using other people's suggestions of 2.5 cups broth, 3 cans black beans, and more garlic, and it's wonderful.

Tater Tot Casserole II

Good, but I added four cups of frozen veggies and some soy crumbles, halved the sour cream, and skipped the fried onions. I also accidentally bought the flat tots rather than the cylindrical tots, so I put half on the bottom, then the other ingredients mixed together, and topped with the remaining tots. It also needs salt, pepper, and garlic. But really good with those changes!

Raspberry Lemon Muffins

So good! I used low-fat lemon yogurt, extra lemon juice, and a frozen cherry berry mix. I chopped up most of the berries because they were pretty large and baked them for 20 minutes. They're really easy to make and delicious, not sure how people messed them up.

Homemade Black Bean Veggie Burgers

Love these burgers. I use two eggs and probably 1 cup of bread crumbs, and I think they're perfect. I have tried both grilling on aluminum foil and frying, and both are good, although the burgers are a little harder to deal with when frying. I top them with with store-bought hot and spicy mayo, a little ranch, cheddar, lettuce, and guacamole. Salsa is also good on them, but seriously, it's worth the extra effort to put the guac on. Also, I make five patties instead of four because I think they're too mushy in the middle if you make them that thick.

Curried Leek Soup

AWESOME soup. I added potatoes, green beans, ground ginger, and about 1/4 cup chopped basil. I also used about 2 tsp of curry. absolutely delicious.

Mom's Favorite Baked Mac and Cheese

This was pretty good, but I would probably use only 4 ounces of Velveeta next time. I am a fan of cheese, but this was really quite cheesy. I'm going to try using some shredded swiss next time, as it's good in another baked mac and cheese recipe I have. It's definitely important to bake covered until the last 5-10 minutes.
