Pico de Gallo Chicken Quesadillas

Reviewed: Sep. 30, 2008
4 stars b/c I did change a little. The pico is 5 though! Very good. I used pepper jack cheese b/c they didn't have the off brand of the other. I think I'll continue to use it b/c it made it a little spicier, which I love. I also seasoned my chicken while cooking it with cumin, chili powder, lime juice, paprika, and garlic powder and left out the onions since there is enough in the pico. Awesome Awesome Awesome! I love this! Put in oven for just a few minutes instead of flipping.

Baked Potato Soup V

Reviewed: Sep. 25, 2008
WONDERFUL!! Although this recipe was a bit of a hassle on the stove, it tasted marvelous. Next time I'll slow cook it b/c it was just soooo much food! It is a little on the thick side which I love but if you wanna thin it out use a couple less potatoes and sub. c. broth for some of the milk! I loved it the way it is! The only things I changed: I baked my potatoes and I sauteed white onions with the bacon. And I added more spices....including some rosemary, parsley, and basil...not too much! The green onions definately give this some color! Thanks soooo much. This is now the only potato soup recipe I'll use! First and last!!!!!

Bev's Mac and Cheese

Reviewed: Sep. 23, 2008
This recipe was very simple to make. I followed it exactly, except I made it on the stove. I was a little disappointed. It turned out chalky. I'm not sure if this was from the flour or the shredded cheddar. If I do make this again, I will definately use less flour and maybe velveeta instead.

Irish Car Bomb I

Reviewed: Sep. 14, 2008
This really isn't a Car Bomb without the Bailey's Irish Cream in the shot glass....that's why you are supposed to chug them before they curdle. Yummy!

Irish Car Bomb II

Reviewed: Sep. 14, 2008
This is my favorite drink of all time!!! I can drink like a fish when I have these...not recommended though! LOL. I definately use Jameson, Bailey's, and Guiness...and it does not curdle if you drink it fast enough! So chug away! That is the point! I love love love these!

Creamy Zucchini with Linguine

Reviewed: Sep. 11, 2008
This recipe was good but I did some major tweaking after reading the reviews. Many said there was no flavor...well if you add any powdered seasonings (garlic, etc) to that much hot oil it is going to burn the flavor right out of it. I added my seasonings instead to the milk in a different pan. Other reviews said the milk curdled...you can not add any dairy product to hot oil and expect it not to curdle. I instead slowly heated the milk/seasonings and let the oil & zucchini mixture cool a little before combining the two. Turned out wonderful. Would definately use 3-4 zucchini though!! And 2% milk worked just fine. Thank you so much.

Baked Teriyaki Chicken

Reviewed: Sep. 10, 2008
I made this tonight and it smelled delicious but when we went to eat it...another story. One out of four of us actually finished supper. The rest of us found something else to eat. Way to sweet and had a strange taste...could not put my finger on it. Sorry.

Carne con Chile Rojo

Reviewed: Sep. 10, 2008
This is a great recipe! I love it. I originally found this recipe because I was looking for beef recipes with less than 300 calories and this was on the list. To cut down on the calories even more...I used olive oil instead of the vegetable oil which is much better for you! Thanks so much!

Crispy Rosemary Chicken and Fries

Reviewed: Sep. 10, 2008
This was excellent! I went with boneless chicken breasts also and put the potatoes in the oven for 1/2 an hour before I put the chicken in. The chicken did not dry out and the potatoes still soaked up that chicken flavor the last 1/2 hour of baking! Great recipe and very easy to make.
