High Temperature Eye-of-Round Roast
Easiest Fool Proof Beef I have ever made. I followed the recipe exact except I did add garlic to the roast along with the salt and pepper. My oven is old and not 100% accurate so I preheated to 500 and left it there for 20 minutes to make sure the oven was nice and hot, then I set the oven to 475 as directed and cooked my 2lbs eye of the round for 17 minutes, shut the oven off and left it for 2 hours. I let it sit for 15 minutes before I cut it. Perfection, my husband raved over it.

Eggplant Supper Soup
Great tasting soup. Followed the recipe exactly. Even the 6year old grandson who is very picky loved it!. I do not say the word eggplant when they ask what's cooking. I just say hamburger soup. They have asked me at least once a week to make it. This soup is so easy even a beginner can make it! Tried it with leftover turkey and used chicken stock instead of beef, delicious.

Oatmeal Chocolate Chip Cookies I
Excellent cookies! I took the advice of a few other readers and used 1/2 shortening,1/2 butter. I also added 1 teaspoon vanilla & 1 teaspoon water. I baked at 350 for 8 minutes but I moved my oven rack up one from the usual postion ( 3rd row) I allowed them to sit on the cookie sheet for 1 minute and transferred to a rack.....Perfect. I got rave reviews!
