I've made this twice, once as directed and once using eggwash and more breadcrumbs as suggested by other reviewers. Both times it was very tasty. The first time is considerably lighter, and the breadcrumbs act just as a bit of texture difference. Using the eggwash, they took on a breading function. Both very good, and very different. Next time I'm going to try a little dijon mustard on the inside, which I think would round out the flavors.
