Pumpkin Muffins II

Sooo Gooood! I added chocolate chips and walnuts and did the health conscious replacements as suggested (2 c. whole wheat, 1c. oats, applesauce instead of oil, and 1/2 brown // 1/2 white sugar). Next time I will see if I can get away with even less sugar. These didn't seem too healthy to enjoy at all!

Pumpkin Ice Cream

This is not for everyone - but for those who like the taste of fall -- SO GOOD. I used gingersnaps and did one batch with a quality vanilla ice cream and the other with a European walnut ice cream. The walnut ice cream was by far the favorite of the more gourmet tastebuds - i think the vanilla made it a bit too sweet.

Croutons

These were good, but the powdered seasoning makes it taste a bit artificial to me. Straight butter without the seasoning might be better. I also did a batch with more olive oil than butter with very difference taste results (obviously), but still the same good crunch.

Butternut Squash Layer Cake

Finally a great squash dessert recipe! People enjoyed eating this cake (with cream cheese frosting). The texture of the cake was wonderful - perfect - and I even added an extra 3/4 cup of winter squash. The reason this is not 5 stars is that the maple doesn't provide the intensity of flavor I like. I added 2 t. pumpkin pie spices and that still was too bland - next time I will double that amount. I did not do the brown sugar frosting.

Spaghetti Squash I

I can't believe this was spaghetti squash! So good! I used to serve spaghetti squash with a marinara sauce and parmesan - it was tolerable, but this was amazing! The feta cheese, garlic, olive, tomato combo works wonders. Our basil is done for the season so I used fresh parsley -- still tasted great.

Red Lentil Curry

Good base recipe. I way overcooked the lentils and ended up with a good tasting mush, so next time I will stick with about 10 minutes on the lentils. I added a splash of lemon juice on my plate (my husband ate this with fresh pineapple) and that gave it just the right umph.

Homemade Black Bean Veggie Burgers

A delicious way to add more legumes to the diet. We liked them best with salsa and cheese and chips, but they where still good eats burger style on bread.

Lamb Tagine

Wow!!! I tripled the recipe for a larger group using chicken and it was still wonderful (it took 2 crock pots). I didn't do any shortcuts, which made this quite labor intensive - so next time I will chop things in my food processor and maybe use jar garlic and ginger (not as good, but time-saving.) This is too good not to make again! It was great with the attached couscous and cucumber raita recipes.

Day Before Mashed Potatoes

Everyone loved these except for me. I didn't like the garlic flavor and they seemed too whipped and pastey. However, the crowds polished them off quickly and it was very convenient to have them in the oven as our Turkey rested.

Apple-Cranberry Crisp

Everyone liked this except for me. It tasted like mulled cran-apple juice with too much spice -- the topping needed more nuts/crunch and just didn't carmelize like I thought it should -- and the overall texture was too "dusty," as though the spices didn't dissolve or where too dry. On the positive side, it was easy to make with a crank apple spiral peeler tool.

Zucchini Bread VI

A lighter version of zucchini bread. I was disappointed that it didn't taste as lemony as I was expecting - it is not a lemon bread to be sure. However, we still devouring this yummy dessert bread. I added chocolate chips too and we enjoyed that.

Delicious Black Bean Burritos

This will become a regular meal in my family. I did double the recipe and took many of the additional recommendations (esp. diced tomatoes!!) the recommendation for a full packet of cream cheese might have been a bit excessive, but it made for a rich meal and several chips and dip type snacks to follow.

Caramel Apple Pork Chops

This is going to become a regular/special feast. It was easy to make and did not need any changes. It did double the recipe for sauce as recommended since we served it to guests. Everyone loved it!
