Carrot Cupcakes with White Chocolate Cream Cheese Icing

These were so moist and delicious! I made a regular cream cheese icing, and took out half the oil and put in 1/2 cup of applesauce. I think I could easily cut out 1/3 of the sugar as well to make them more healthy...they are definitely on the sweet side. But oh so good!

Sarge's EZ Pulled Pork BBQ

This recipe is great. Add a teaspoon of liquid smoke when you are adding the broth and coffee. It gives it a great depth of flavor. Very delicious with a side of coleslaw.

Double Tomato Bruschetta

Seven Layer Taco Dip

Instead of a layer of lettuce, I put a layer of homemade guacamole. This was really good, and can definitely feed a crowd. It made a ton! We made burritos the next day with leftovers.

Italian Breaded Pork Chops

These are really good, especially with a squish of lemon on them. One thing is I would cut down on the amount of ingredients you use for the breading; there's way too much. More than you need, and most will end up in the garbage. I will probably cut down on the breadcrumbs and parmesan cheese by half, and the eggs you only need two...and skip the milk. It's unnecessary. You can also still put them in the oven if you don't have an oven-proof skillet, just put the pork chops on a baking sheet with a rack so they stay crispy. Some other reviewers didn't see the point of removing the garlic from the oil, but it's so it won't burn. Garlic burns easily and tastes really bitter if it does, and while it was obnoxious to try and remove the chopped garlic from the oil, you could just crush four cloves and then removed them from the oil when they've imparted their flavor. All in all, great recipe.

Brown Sugar Smokies

These were really good; I guess what's not to like about salty pork, wrapped in salty pork baked with sugar? They aren't over-the-top phenomenal, but they are addicting and disappeared really quickly when I made them for friends.

Frosted Banana Bars

These are delicious! I frosted them with Cream Cheese Frosting II (1/2 the recipe) from this site and it's a perfect match. I garnished the top with chopped walnuts. Like other reviewers I also used a 9x13 pan, and baked for about 30 minutes. This was such a nice twist on regular banana bread, and turns it into a decadent, moist cake.

Slow-Cooker Chicken Tortilla Soup

This was so fabulous! I took the advice of a lot of other reviewers and made some substitutions: 1. Can of diced tomato with spicy red pepper rather than can of whole peeled tomatoes. 2. Jar of Hot Taco Sauce rather than enchilada (couldn't find it). 3. No water, just extra chicken broth. 4. Added a can of black beans and half a package of taco seasoning. 5. Used raw chicken thighs and they cooked with the soup and I shredded them before we ate it. 6. Crushed our own store-bought taco's over top instead of making them. This soup was SOOO good! My husband kept going back for more and ate 3 bowls. He said it was one of the best soups he had EVER tasted. I will DEFINITELY make it again. Tip: If you make some of the substitutions I did, leave out the salt. I added it, but it was a little too salty.

Carrots in Dill Butter

These were a good, easy side dish. I followed the recipe exactly (except for using dill weed instead of seed)and the combo of carrots and dill is great. I'm not entirely convinced that the sugar is needed, so I will probably leave that out next time.

Sour Cream Pork Chops

It's true these pork chops are very moist and you can cut them with your fork, but the recipe as is, is kinda bland. I added a good amount of fresh dill and that perked it up and made it more flavorful, and it definitely wouldn't have been the same without it. They were good, and it was nice to come home to a warm meal, but I'm not sure if I would make them again.

Grilled Bacon Jalapeno Wraps

These are sooooo delicious! I baked mine for 20 minutes at 375 degrees and then broiled until the bacon was crispy. I took them to a party and they were gone in 10 minutes! Definitely try to make sure to get out as much of the membrane as possible...people who are afraid to try them will try a small one, and those are the ones that tend to be spicier since it is harder to get the membrane out. You might scare those people off! Incredibly delicious though.

Dynamite Sauce

Every time I make sushi, I try to get a spicy mayo to work in our dynamite rolls...it's never quite right. I tried this recipe, and while the flavor is right with the chili-garlic sauce and sugar, the proportions just weren't right for me. Dynamite Sauce usually has a good kick of spice and to get that I had to add 4 times the amount of chili-garlic sauce that this recipe called for.

Chicken Cordon Bleu II

LOVE LOVE LOVE this chicken! Make it exactly as is, and you will be in heaven. The sauce is amazing, so make sure you take advantage of that and serve egg noodles or other pasta along with the chicken. I haven't tried it, but it would probably also be fantastic with mashed potatoes.
