About this Cook
I am a mamma of one. I have a 4 year old little boy who loves to cook as much as I do. I feel so accomplished when we sit down at the dinner table every night to a home cooked meal. I am blessed with a kid who will try and eat anything!
My favorite things to cook
I love to cook anything with chicken. I love casseroles and one dish meals. I'm not to big on baking. But I would like to be able to make some good homemade cookies for my son.
My favorite family cooking traditions
Growing up me we always had Thanksgiving at our house and every year I would have a certain job my mom would assign me. Nothing to hard because she was the amazing cook. I remember all morning running around the kitchen with all the yummy smells and all of our loved ones there. Thats where wanting to learn how to be a good cook came from.
My cooking triumphs
Making Pork Chops, Scalloped Potatoes and Asparagus with no help or recipes! I was so proud of my self. It was my first meal with out a recipe card!
My cooking tragedies
From scratch pancakes... Long story!

Best Tuna Casserole
I love this recipe, I have been making it for about a year now. I use only about 3/4 a package of noodles and I add about a 1/4 a cup of milk because it does get dry. You really want the mix to be soupy when you put it in the oven because anything with noodles dries out easily.

Baked Asparagus with Balsamic Butter Sauce
Hands down... THE BEST ASPARAGUS RECIPE EVER!!!!! Really, this sauce is amazing. I will NEVER make asparagus any other way. My 5 year old even 2 servings of it and ask for it for dinner all the time!!!!!!

Lasagna Stuffed Shells
This was great! I used 1lb Italian Sausage instead of ground beef and ricotta instead of cottage cheese. I also just used a jar of spaghetti sauce because I had it on hand. Everything turned out AMAZING! Thank you so much for this recipe, I will be making it again!
