Peanut Blossoms II

The recipe on here is phenomenal. The only thing I did differently was to use butter instead of shortening. However, be very careful with the timing on these. The recipe states 10-12 minutes and for my brand new oven, it was WAY too long. The first batch I made was completely burned on the bottom in 8 and a half minutes. The next batch I put in for 7 minutes and it was perfect. Don't wait until they start to brown, that will be too long. As soon as they start to crack on the top, they are ready to be taken out. I did half of these with dark chocolate kisses and they turned out great as well!

Fluffy Pancakes

I made these last night as a breakfast for dinner meal and they were fabulous!! I doubled the recipe for the two hungry men in my life and there were only 2 pancakes left when we were finished! The only thing I changed was to add a tsp of vanilla to the eggs and a dash of cinnamon and nutmeg to the dry ingredients. I will definitely use this recipe again!

Delicious Ham and Potato Soup

I made this last night in my slow cooker on low for almost 12 hours and it was WONDERFUL! I used about 2 1/2 cups of potates and twice the amount of cubed ham. I also added 2 large diced carrots. While making the flour/butter mixture, I added 3/4 lb. of cubed Velveeta cheese before adding it to the soup. This was wonderful and I will definitely make it again!!

Raspberry Fudge Brownies

These brownies are AMAZING! They are a little time consuming due to the different steps and layers, but they are definitely worth it! The only thing I would suggest is adding more of the raspberry preserves to the topping if you want a stronger raspberry flavor. Otherwise they are wonderful as is!!

Egg and Cheese Puffs

These are AMAZING!!! They are also VERY easy to make. I cut the recipe in half and they were gone in 2 days. I'm making them again this weekend but I'm leaving out the bacon this time and going to use some veggies. Thanks so much for a great/easy recipe!!

Chicken Rotini Stovetop Casserole

This recipe is delicious. The only addition I had was to dice up some roma tomates and add it to the pasta at the very end. Even my picky son cleaned his plate! I will definitely make this again.

Skillet Chicken Cordon Bleu

This is probably one of the best recipes I have ever made. The sauce is AMAZING! I did substitute white wine for the white grape juice per many reviews on here. But all the other ingredients I followed. I chose to butterfly the chicken and pound them thin and then add the ham and Swiss cheese and then closed them with toothpicks. I got rave reviews from my very picky son, which says a lot!! I'll definitely make this again. I might even substitute half and half instead of heavy whipping cream to reduce calories....

Sour Cream Chicken Enchiladas

I thought this recipe was good. A little too strong of a cilantro taste to me and I even added extra sour cream and salsa. I would make this again with some variations, but it's an easy go-to recipe. I would definitely recommend using corn tortillas as opposed to flour tortillas though. The flour tortillas get very gummy with all the sauce.

Chocolate Peanut Butter Bars IV

These were VERY easy and delicious!!! I did reduce the confectioners' sugar to 2 cups, added about a half a cup of peanut butter to the milk chocolate chips and used an 8x8 pan because a 9x13 pan was too big. I will definitely make these again!

Too Much Chocolate Cake

I made this cake for a dinner party I was having and followed the directions as stated except for a couple suggestions from other reviewers. I used the mini chocolate chips as well, but only used 3/4 of the bag, which was more than enough. I also used the Satiny Chocolate Glaze recipe that someone else recommended as well and it got rave reviews! I will definitely make it again. Very easy but wonderful dessert!

Black Bean and Couscous Salad

I just made this and used diced up an English cucumber, yellow pepper, and a can of petite diced tomatoes along with the frozen corn and black beans. I didn't have any fresh herbs unfortunately and used lemon instead of lime juice and added a some cayenne pepper for a kick and it's great right now, I bet after chilling overnight it will be even better!! Yum!

MMMMM... Brownies

This recipe is very simple and delicious! I doubled the recipe and put it in a 9x13 glass pan and cooked them for 28 minutes. I put extra mini chocolate chips in the batter once it was completed and beat the eggs before adding them to the chocolate chips and butter. I had no problems with the eggs scrambling since I waited a couple minutes after stirring in the chocolate. I put chocolate frosting on top and they vanished! Will definitely make again!!!

Eggnog Cheesecake III

Just made this cheesecake....made it exactly as it states but with a water bath and cooked it longer. Didn't crack at all while cooking but when I took it out of the oven and released the pan, it got a small crack on the side... I'm hoping for now that's the only one, but it looks like it's setting up nicely. I will update later with more results...

Boilermaker Tailgate Chili

I thought this recipe had a great foundation and then I played with it to suit my own tastes. I cooked everything on the stove in a huge pot. I used 1 1/3 lbs. ground chuck, 1 lb. Italian sausage and 1/3 lb. chopped bacon. I did not use bacon bits, real bacon has much better flavor. I only used one 28oz can of diced tomatoes, 2 cans of chili beans in medium sauce, 1 15oz can of diced tomatoes and green chiles, 2 jalapenos- 1 seeded, 1 not seeded, 3 cubes of beef bouillion instead of 4 and then did all the spices and veggies the recipe called for and adjusted the spiciness to suit my preference and I thought it was great. I know some people will say to follow the recipe if you're going to review it and I'm sure it's good the way it's written as well, but the fun in cooking is making it your own. Great recipe!

Mini Meatloaves

I made these last night and thought they were great! I followed some other reviewers by letting the oatmeal/milk/cheese mixture set for awhile. I actually put it in the refrigerator for about an hour since I wasn't ready to make the meatloaf yet. I used a meatloaf mix of 2/3 ground beef and 1/3 ground pork, for a total of almost a pound and a half of meat. I think the small amount of pork gave it a lot of flavor. I also used a packet of dry onion soup mix, chopped up a small onion and added Montreal steak seasoning, garlic and onion powder and left out the salt based on using the onion soup mix. I also cut down on the brown sugar for the topping and it turned out perfectly. I used a jumbo muffin tin and it made 6 jumbo muffin meatloafs in 45 minutes at 350 degrees. Very easy recipe!

Tacos in Pasta Shells

For the work that this recipe requires, the taste really isn't worth the effort. I followed some of the other reviews on this site and used 8 oz of cream cheese, which was WAY too much. 3-4 oz. is plenty. I also used taco seasoning instead of the spices that were called for. I added 2/3 of a cup of water with the seasoning. I also added chopped onion, cilantro and garlic to the meat mixture. I used enchilada sauce on the bottom of the pan and then topped the shells with the taco sauce as the recipe states. I served these with spicy refried beans and Mexican rice. They were decent and maybe okay for a weekend meal, but they just took too much time for a weeknight. I doubt I will make them again.
