Maple-Garlic Marinated Pork Tenderloin

My husband and I enjoyed this for supper tonight. I followed the recipe precisely except I had 2 tenderloins, each 1 1/2 lbs. I marinated them overnight and cooked them on the grill. It took about 40 min. The only thing I didn't see mentioned is I noticed scum on the top of the sauce when I boiled it so I skimmed it off. We decided this recipe is a keeper. My hubby drizzled the sauce on his pumpernickel bread. Next time I'll double the sauce for 2 tenderloins because it will probably be for guests.

Blackberry Cobbler

This is a special treat. The biscuit portion reminds me of a shortbread cookie. I made the dough in the food processor and rolled it out as instructed. Mine was done and getting brown after only 50 min. I added the extra cinnamon/sugar and baked another 7. It turned out perfectly. I used frozen mixed berries that were heavy on blackberries. I ended up with a lot of extra juice in the bag so while the cobbler baked I sweetened the juice and thickened it with a little cornstarch. Then I served it warm along with the cobbler and whipped cream.

Carrot Souffle

I get Carrot Souffle every time my husband and I go to Picadilly. This is just as good. I used organic unsalted butter instead of margarine, cutting it down to 6T instead of 8. It had a buttery richness. I replaced much of the sugar with Organic Zero by Wholesome Sweetners (a granulated sugar with no calories, artificial ingred., glycemic index or bitter after taste). It was beautiful, delicious and easy. I used my Rival electric wand to puree the carrots, stir the eggs and combine ingredients together. I took it over to my 90 yr old in-laws house for dinner tonight as a side along with a meat and potato type meal. It was enjoyed by all. My husband especially liked it. I'll be making this one again guaranted.

Savory Chicken Breasts

Everyone raved about this one, even my pickyune 6 year old grand son who exclaimed, "This is the best chicken I've ever had!" My husband and I couldn't believe our ears. I seasoned the chicken with a little sprinkling of garlic powder and fine herbs along with the pepper, doubled the sauce ingredients and used Panko bread crumbs mixed thoroughly with the butter. They didn't know they were eating Swiss cheese because I didn't tell them. Sometime when it's just my husband and myself I'd like to try the suggestion of using a little splash of white wine. Thanks for this miracle recipe that even my grandkids like.

Sam's Famous Carrot Cake

I've made more carrot cakes than you can shake a stick at and this one is wonderful! I baked it in a 9X13 and served it with good ol cream cheese frosting. It was fast, easy, moist and delicious. I chose it over the others because I happened to have buttermilk on hand, it called for less fat and calories and included all the other goodies; healthy, yummy fruit and nuts. I cut the fat even more by substituting applesauce for a third of it and reduced the sugar by substituting half of it with Organic Zero, a delicious organic granulated sugar that has zero chemicals, zero calories, zero glycemic index and no bitter after taste. HINT: Look for it at The Vitamin Shoppe or in small packets at the grocery store for your coffee. It's the best thing since sliced bread! Sugar with no calories! Yeah! This is now on my favorites list. Thank you Sam!

Tender Italian Baked Chicken

My husband and I enjoyed this delicious dish tonight with a Greek salad, homemade potato salad and hot, crusty mini Italian loaves. Our chicken breasts were large. They had to be baked for 40 minutes. They turned out moist. I used Hellman's Olive Oil mayonaise; half the calories.

Tasty Green Bean Casserole

Wonderful Andy! I took this to our family Christmas Eve dinner party tonight. Everyone loved it! The red pepper makes it a beautiful dish for Christmas. I used frozen Italian green beans which were thawed in fridge overnight. I followed the recipe exactly, only doubled everything. I still used a 9 x 13 and increased baking time by 15 minutes. Our family came up with new names for the dish when they asked me for the recipe: Internet Green Beans and High Tech Green Beans.

Remoulade Sauce a la New Orleans

Old Settlers' Baked Beans

This dish is scrumptious! It is a little spicy. I tripled all ingredients accept the beans (which I doubled)and used only 1/4 cup of the white sugar. It was plenty sweet with the brown sugar and the barbecue sauce I happened to use- KC Masterpiece Hickory/Honey. A huge hit!

Peanut Butter Pie VIII

I wonder if that Florida restaurant was Bradenton's Amish restaurant Miller's Dutch Kitchen. This looks and tastes just like it. I can't tell you how many times I bought a slice to go for my husband. If he was with we were too full we would still buy a slice to go!

Corn Bread Casserole

I just gave this a try and everybody liked it even my 3 grandchildren. I changed nothing. I had heard of this dish but have never tried it. It smelled great and looked apealing. It's a keeper.
