Chicken Enchilada Soup III

Yummy! The taste was fab. A friend and I truly enjoyed this. Next time I make this (and there will be a next time - soon), I will use less masa - it was VERY thick. I also used enchilada sauce with green chilies, so it gave it just the right amount of kick. I don't like anything hot or spicy, so this was just right. I also used all chicken broth, no water. Thanks for the recipe - it was sooooooo tasty!

Whole Grain Waffles

These are excellent. I ground WW flour, blended rolled oats to make oat flour, ground flax seed and added millet. Also used all applesauce to replace the oil. These are the best and sooo nutritious. Thanks for a great recipe.

Awesome Slow Cooker Pot Roast

I found this rather bland. Maybe I shouldn't have cut down the amount of onion soup mix? I had a smaller roast and since I hate salty stuff, I used only have the pkg. Everything else was the same. Don't know what I did wrong. Making sure there was no onion pieces on it, I gave my cat a few "strings" of the roast. He gives it 5 stars!

Bottom Round Roast with Onion Gravy

I cooked this in the crock pot - high for 1.5 hrs, then the rest of the time on low. Was pretty good.

Grandma's Slow Cooker Vegetarian Chili

We made this yesterday as a "trial run" since we have to take a pot of chili to a ladies get together this week and this will probably be the only vegetarian chili. With a few changes, this was quite good and will be made again. We used a can of black beans instead of the BB soup, 3 cans pinto as we had no kidney beans on hand. Also only used 1 stalk celery and added another can of tomatoes and 1 small can of tomato sauce. We also added a half pkg of frozen corn, which worked out well. Next time we are going to add a small can of green chilies, 2 cans of black beans and 2 cans of pinto beans, reduce the amount of oregano (maybe other spices as well? Seemed just a tiny bit bitter) and add a pinch of salt. Today the chili is a bit thicker (which I like) and the flavors have melded. Aside from that, this recipe is a good place to start and is a keeper. Thanks for submitting.

Grandma Johnson's Scones

I made these scones as directed in the recipe (except that I used Craisins instead of raisins because that's what I had). I thought these turned out GREAT! They didn't last very long in our house! I loved them and will definitely make them again, trying out difference fruits. These are definitely a keeper. Thanks for sharing this recipe.

Easy Cheese and Garlic Scones

I made these scones for a friend who loves cheese and garlic. As many reviewers suggested, I upped the butter to 6T, used 1/3C cheese instead of 1/4C and used 2/3C of milk. I had no idea what a 3/4 pinch of salt was, so I used 1/8 tsp. I also used 1 garlic clove. I've made other scones and the baking temp was 350, so I used that. It was too low - it took forever to bake them, so I would suggest a 375 or even 400 degree oven. (Maybe it makes a difference that I have a gas stove??) I also used my Bosch bread maker to mix it - that way I wouldn't be handling it much and warming up the dough too much. Worked great. Now, I asked my friend to rate these. She said that she gives it a 5 out of 5. Her suggestions were to use 2 cloves instead of 1 (she couldn't pick up the garlic flavor, she thought it was onion) and maybe use a heaping 1/8 tsp of salt. Other than that, she thought it was great and definitely wants to make more of these. She does not over indulge in food, but even she had a hard time staying out of them. Thanks for this keeper recipe.
