Pork and Black Bean Stew

Had an extra pork tenderloin and no time to marinate it and came across this recipe. I doubled the beans but left everything else the same and it is wonderful!! Making it for a second time tonight. Didn't need salt or pepper. Between the pork and chorizo, there's plenty of spice. Oh, I did use bulk chorizo...just easier for me.

Absolutely Fabulous Portobello Mushroom Tortellini

Perfect as is!! My kids love alfredo but it bores me. I wanted to add portobello mushrooms and stumbled on this recipe. It turned out delicious!! I used jarred Alfredo by Bertolli - I'm a working mom and keep it on hand for quicker meal nights. Would love to try it with fresh. My son told me it was "SO good". Thanks for giving us a change of the same ole same ole :-)

Baked Spaghetti Squash Lasagna Style

Didn't change a thing and this was amazing!! Even the kids liked it. Instead of a large spaghetti squash, since none were available, I used to small ones - about half the size of a normal one. It was perfect!! I needed 4 portions and so I was able to place each half of a dinner plate and everyone got their own little stuffed squash :D Makes a great presentation for guests!

Baked French Toast

Won't be making this again. I used the cut down recipe of 6 eggs and no milk (only half and half) - thank goodness as any more liquid and it surely would have been mush! The kids didn't like it at all and my husband and I didn't much care for it either. Texture is definitely more bread pudding like. My stomach is still upset by it :-( Paula Deen has almost the same recipe so I was sure it would be great. I'll stick to regular french toast.
