Eggnog Quick Bread
Really yummy bread, and very simple to make. I added a little cinnamon because I just love cinnamon. Also, mine turned out a little dry, even with adding a couple extra tablespoons of oil. But other reviewers commented that it got better after a couple days, so I'll try another bite tomorrow...and the next day... And next time I bake it, I'll add a little more moisture somehow...maybe oil or a bit more egg nog.

Roasted Brussels Sprouts
This is one of my favorite veggie recipes. I roast them for only 20-30 minutes, though -- the charring that occurs is really yummy, but you don't want them to totally burn or turn to mush. I also usually cut the sprouts in half...sometimes they're really big. Definitely keep your eye on them and shake the pan or stir them around a bit every 10 minutes. For some real fun, throw in a little garlic powder, Adobo seasoning, cumin, or other favorite spices. I've also made this with whole cloves of garlic and cherry or grape tomatoes tossed in. The tomatoes pop open and make a nice little sauce. The garlic turns nice and soft and sweet. And the smell while it's cooking will drive you nuts!

Russian Tea Cakes I
I remember these cookies from my childhood, and had no idea they were so easy to bake! I followed one reviewer's suggestion to double the confectioners sugar in the dough itself...but I think that made my dough a bit crumbly and difficult to form into balls. Perhaps adding a bit of milk would help. You also need to really chop the walnuts -- smaller the better. I'm also going to try baking at a lower temp for a bit longer. When they're rolled in the sugar, they really are lovely -- perfect for Christmas or any special occasion.
