Butternut Squash Soup

This was delicious with a loaf of crusty bread. I used chicken stock and one package of cream cheese and it was perfect. Will definately make again.

Sweet Dinner Rolls

Followed the recipe and used my bread machine for the first rise. Formed the dough into a dozen little balls and baked in a muffin pan. This gave me 12 delicious rolls and I would not change a thing.

Roasted Vegetables

Perfect for the cooler weather. A variety of vegetables can be substituted but the balsamic vinegar is what makes the dish.

Cream Puff Cake

I've made this twice and it's always a hit. The first cake was drizzled with chocolate and the second was toped with fresh strawberries. A friend requested I make it for an upcoming baby shower. I think this time I will top with strawberries then drizzle with chocolate. Thank for sharing this easy recipe that has a big WOW!! factor.

Lemon Chiffon Cake

I like anything lemon so I decided to try this recipe as it had good reviews and looked yummy. The first time I baked this cake I followed the recipe closely but something was missing or maybe their was to much of something. Anyway I wanted the LIGHT fresh taste of lemon but the cake was dominated by the heavy pie filling. Since this is a good basic chiffon recipe I decided to tweak it a little. Wanting to punch up the lemon I substituted the water with 3/4 cup + 1 tbl of fresh sugar free lemonade to which I added the white sugar. This was simmered in a small sauce pan till well dissolved. Do not reduce as this will effect the texture of the cake. Also cool well or risk having scrambled eggs in the batter. After combining the dry ingredients I added the oil, egg yolks, cooled lemonade mixture and increased the lemon zest to 2 tbl. The cake was baked to recipe. Wanting a light cake I chose to top with a glaze. For this I combined a scant 1/2 cup white sugar, 1/2 cup water and the juice of 1 large lemon. This was simmered until reduced to a thin syrup. As I had a little limencello, left over from a party, I added 2 shots to the syrup and mixed well. This was drizzled over the top of the cake. You could always skip the limencello but it gives a pronounced fresh lively citrus flavor. This can also be made to taste by adding lemon zest, extract or oil as well as making thinner or thicker. Try it with orange juice, zest and liqueur. Either way it is yummy.

Ooey-Gooey Cinnamon Buns

I LOVE cinnamon buns and have tried numerous recipes, in an attempt, to duplicate the buns my grandmother made when I was a chid. She was a fantastic cook/baker but, unfortunately, did not leave recipes for several of her wonderful treats. I must admit these delicious buns are very close. I followed the recipe exactly as printed except I only required 3 1/2 cups of flour, total, to achieved a perfectly silky smooth elastic dough. I also added 1 tsp vanilla and let the buns rise about 2 hrs initially and 1 1/2 hrs the second rise. This produced a wonderfully flaky bun which is delicious with or without the caramel pecan topping. My husband and grandchildren said these are the best I have baked thus far. I encourage anyone considering cinnamon buns to try this recipe....you will not regret it.

Asian Chicken Salad

I made this for dinner, a couple of night ago, and it was spicy, colorful, crunchy and absolutely delicious. I doubled the recipe for the dressing and I'm really happy I did as my husband said it was so good he could "drink it" and I used it to marinate the chicken. I also made a few changes to personalize the taste. I added mandarine oranges, 1/2 cup of toasted almonds, and used baby salad greens and spinach insted of iceburg. I also added about a Tbl garlic oil to the dressing. I did not have brown sugar or sesame seeds, on hand, so I substituted honey and left out the sesame seeds. This dressing is so versatile and yummy I will be using it on various meats, poultry and fish. This is definately a "keeper" and I will be repeating frequently. Thanks for sharing.
