Tempeh Reuben

This was very good, first time trying Tempeh and loved it. I marinated it for a bit with olive oil, ginger, and garlic then pan fried it for about 5 minutes in the marinade, otherwise followed the recipe. I will make this again...probably tomorrow!

Sausage 'n' Spinach Eggs

I really liked this...cooked it on Sunday for a quick healthy breakfast during the hectic week. I omitted the sausage and just combined everything in a mixing bowl, poured it in a pan and baked it. Yummy - Thanks

Turnip Casserole

Great use of turnips!! This is my first recipe using turnips since I started trying different veggies. I loved it, and now love turnips, I have made it twice now. I did add an extra egg and used less cinammon and omitted sugar the second time I made it.

Carrot Apple Salad

Great!! I loved it...good salad to take in my lunch when I am tired of lettuce. I didn't have pineapple so omitted it and substituted craisens for the raisens. I'm kinda glad I didn't have the pineapple, it may have made it to sweet and "dessert like".

Garbanzo Bean and Quinoa Salad

I really liked this dish! I made it for workday lunches and it was very satisfying. I did not have mint or coriander so omitted them and it still tasted great. The mint would have been a nice addition of color to the dish. Perhaps I'll think of of good veggie to add into it to make it a complete meal. I took a picture...will post soon.

Southern Grits Casserole

Very yummy dish...but as usual I didn't have all the ingredients so I improvised. I omitted the meat and added sliced mushrooms and chopped onion. I didn't have grits so used polenta, and didn't have cheddar so used monterey jack cheese. I only used half the amount of eggs. I can tell this would be very good as written and will try it that way when I have all the ingredients.

Easy Indian Style Okra

This was very good and easy...the soaking in the vinegar didn't work for me and it was a bit slimy, but that's just Okra...it is supposed to be that way. I didn't have all the specific spices so I used Chinese 5 spice.

Roasted Beets 'n' Sweets

Yummy!! This was my first try at cooking beets...what fun! They are so pretty, I must explore beets further. I opted not to waste a plastic bag so I put in a plastic bowl with lid and shook it to combine evenly. I also used brown sugar instead of regular. Can't wait to share with friends and family!

Mung Bean Stew

This was a very good stew. I didn't have onions or celery and I added fresh green beans. I skipped the pre-cooking of everything (except the beans, of course) and just rough chopped all the veggies and put it all in a casserole dish. I cooked it in the oven for probably about an hour until the veggies were cooked to my liking (al dente). It would probably do just as well on the stove top in a big pot. I will definitly make again.

Chili Rick's

OMG!! I had the assignment to bring chili to a potluck because I was one of the only caucasians participating and they wanted really good chili (apparently us white girls can do that?). Anyway, I was under a lot of pressure to succeed in my assigned task and certainly did not want to dissapoint. This was a BIG HIT!! Everyone loved it. I of course took no credit, but announced it was Rick's chili recipe. There was a couple servings left over so they got put in ziplocs and put in the freezer for Mondays lunch. Unfortunately the refrigerater decided to break over the weekend and we lost those two precious bags of Chili Rick. Tears were shed!

Marinated Green Beans with Olives, Tomatoes, and Feta

This was very good overall although next time I will remember to not accidently dump the whole container of cheese in when I halved the recipe (note to self, do not talk on the phone and follow a recipe at the same time!)I don't think I used enough olive oil because it was a little "gummy" everything kinda all stuck together, which could have been because the cheese to "wet" ingredient ratio was way off. I will add more olive oil an re-mix for tomorrows lunch. I didn't use the oregeno becauase my olives were mediteranian blend and already had spices in them. I will make again but will follow the recipe better.

Eggplant con Queso

Yummy! My second attempt at making eggplant was a success(first attempt was a disasterous baba ganoush). I added diced cooked chicken and a can of mild green chilies and used monterey jack cheese instead of cheddar and used bread crumbs instead of cubes. I didn't have heavy cream so I used sour cream thinned down with some milk. It wasn't very pretty, but was very tasty!

Tahini Cookies

I really liked these cookies, alot!...I took others advice and substituted some of the honey for sugar free maple syrup, added a tablespoon of peanut butter along with the tahini for fear that I would not like the taste of the tahini, and I added ground flax seeds and some ground almonds. I couldn't taste the tahini at all, which is fine but next time I will omit the peanut butter to see if I prefer being able to taste the tahini. I have only had tahini in hummus, which I love so I am looking forward to tasting it in a cookie.
