Slow-Cooker Corned Beef and Cabbage

Really good-my family loved it. The only change I made was to cook it on low for 8 hours and then add the cabbage the last 1/2 hour of cooking. 8 hours on high seemed like the meat might get too tough.

Dump Cake IV

A couple of tips to make this cake even better: 1. Use a 9/13 pan. 2. Melt the butter before pouring it on top of the dry cake mix. 3. During the last 10 minutes of baking, sprinkle chopped walnuts and shredded coconut on top. This cake is out of this world!

Quick Peanut Butter Cookies

I usually use brown sugar and skip the baking soda when I make these. Be sure to let these cool on the cookie sheet for 5 minutes before removing to a wire rack, or they may fall apart.

No Bake Peanut Butter Pie

I brought this to a post-New Year's party where we were all on diets, so I subbed in light Cool Whip, light cream cheese and skim milk. The taste was awesome and we couldn't tell it was low fat!

Alison's Slow Cooker Vegetable Beef Soup

Loved this! Be sure to use a 5-quart slow cooker and sub in 6 cups of water with 6 cubes of bouillon but skip the salt and this will be the best vegetable soup you ever had!

Easy Corn Pudding

This is a good one-be sure to add two eggs when making this. This can also be doubled very easily and made in a 9X13 pan for a larger crowd.

Easy Broccoli Quiche

Chili-Lime Chicken Kabobs

I did not make kabobs with this; instead, I marinated 4 chicken breasts overnight in the marinade and broiled these. They were really good and tender with a nice kick to them.

Blackberry Pie I

This is delicious! I used a bag of frozen blackberries and increased the bake time to 30 minutes. I would recommend only brushing the pie with one tablespoon of milk before sprinkling the sugar, as two made the top a little watery-still delicious though!

Tuscan Soup

Reuben Dip

My mom has been making this for years, so I took pieces of her version and added it to this one. I skipped the Thousand Island dressing and used 2 cups of mayo with 1 can of drained and rinsed sauerkraut, a pound of shredded corned beef, one pound of shredded Swiss, 8 oz. shredded cheddar and 8 oz. of mozzarella. I mixed it altogether and baked it in a greased 9x13 for 1/2 hour and it was out of this world. I served it with Triscuits and cocktail rye, which my guests really enjoyed.
