Slow Cooker Italian Chicken Alfredo

Reviewed: Mar. 23, 2011
This had great flavor, but I thought the chicken was a little dry. If I make this again, I would cut the cooking time by about an hour.

Slow Cooked Corned Beef for Sandwiches

Reviewed: Mar. 21, 2011
Absolutely delicious! The mistake I made was halving this recipe for one brisket instead of two. I could not get enough of this!

Irish Cream Macadamia Nut Pie

Reviewed: Mar. 14, 2011
Unfortunately, this did not work for me. There was way too much filling for one pie and the taste was very oily. My guests did not care for it and I ended up tossing it out. Sorry! I really thought it would be great.

Salmon Rosemary Burgers

Reviewed: Mar. 14, 2011
These were fantastic! What wonderful flavor. You definitely want to use fresh salmon. I cut mine into small chunks and then ground it in the food processor until it was the consistency of ground beef. I formed the patties and then put them in the fridge for a few hours to avoid crumbling when I cooked them. I broiled these for about five minutes per side and served them on onion rolls with dijon mustard. Awesome!

Great dip-nice change from artichoke dip. I served with Wheat Thin crackers and there was none left.

Spinach Stuffed Chicken Breasts

Reviewed: Mar. 6, 2011
Really good-nice flavor. Next time I make this, I would probably broil the chicken for a couple minutes at the end of cooking to make the bacon get crispy.

Mint Chocolate Fudge

Reviewed: Mar. 3, 2011
Delicious candy, not really the consistency of fudge, but very good-just like an Andes mint. Thank you to the reviewers who suggested making the two chocolate layers separately-it would be impossible to spread otherwise. I also used white chocolate chips for the mint layer. Cut these into smal squares-a little goes a long way.

Polish Chili

Reviewed: Mar. 2, 2011
Really good chili, different flavor. I used turkey kielbasa, habaneros for the Anaheim chiles and skipped the tomatillos (we are not fans of those). This was delicious, although not spicy. Definitely worth trying.

This was positively fantastic! Worth the effort for sure. I used a kalamata olive tapenade which was wonderful.

Moroccan Fig Pork Roast

Reviewed: Feb. 18, 2011
Delicious! I halved the pork and made a 2.5lb roast, so I used 1/2 the spices while keeping the gravy ingredients that same amount. I rubbed the spice mixture onto the roast and let it sit for several hours in the fridge to enhance the flavor. Wonderful served over couscous.

Italian-Style Tacos

Reviewed: Feb. 8, 2011
These were good for a quick, easy economical dinner. I did not add the sugar to the marinara sauce-jarred sauce is already loaded with sugars. I also used soft shell tortillas. My husband liked these.

I made this for the Superbowl this year and my guests liked it, but I found it to be a little too oily.

Greek Lemon Chicken Soup

Reviewed: Jan. 27, 2011
This was very good with some modifications. I'm very glad I read previous reviews before I made this. I halved the egg yolks and soup base, added 1 1/2 cups of cooked orzo instead of rice and also flavored the soup with 2 teaspoons of oregano (I would recommend Greek seasoning, but I didn't have any so the oregano worked). The recipe as written would not have been as good. Thanks for all the suggestions. My two year olds each ate three bowls!

Grilled Italian Sausage with Marinated Tomatoes

Reviewed: Jan. 27, 2011
It was too cold out to grill, so I pan fried the sausages and topped them with the marinated tomato mixture. Great way to serve Italian sausage!

Garlic Alfredo Tilapia

Reviewed: Jan. 27, 2011
Very good dish-quick and easy too. To make this more figure friendly, I coated the filets in cooking spray instead of olive oil and I heated light Alfredo sauce with just garlic-no butter. Delicious!
