Slow Cooker Ham and Bean Soup

Really great! I listened to previous reviewers and added a can of diced tomatoes and an extra cup of water. I skipped the ham bone because I didn't have one. Delicious served with honey cornbread and tossed salad.

Slow Cooker Apple Cider Braised Pork

Very good and could not be easier! I'm not a fan of pork shoulder, so I used a center cut pork roast instead and just reduced the cooking time to make sure it wasn't too dry. Very good!

Pan Fried Halibut

Delicious! To make this healthier, I browned the halibut in oil to get the color and crust set, and then roasted in the oven at 350 for about 15 minutes, since I like my fish well done. We really enjoyed this dish.

Summer Time Cucumber Sandwiches

This has long been a staple among my appetizer recipe collection and everyone always loves these, especially the men! I add 1/4 cup of sour cream to the ranch/cream cheese mix to add more depth of flavors. The great thing is, you can make the cream cheese mixture a couple days ahead of time and the flavor blends really nicely together.

Deconstructed Chicken Kiev

This was excellent! I used 2 1/2 pounds of small Yukon golds and halved them. I also covered the pan while roasting the potatoes to speed the cooking process along. Turned out great!

Hunts® Tomato and Bacon Tortellini

I liked this dish, but something about the onion and chive cream cheese just didn't taste quite right. Next Time I make this, I might just use plain cream cheese or some heavy cream.

Buffalo Chicken Dip

This was really good with some minor modifications, based upon previous reviewers' advice. I used two packages of light cream cheese and spread it in the bottom of a pie plate. I then mixed the chicken (I used Costco's grilled chicken strips) with the Frank's Red Hot Buffalo Sauce and put it on top of the cream cheese layer. I then put blue cheese dressing on top of the chicken and then two cups of shredded cheddar on the blue cheese dressing. I baked it at 425 for 15 minutes and it was awesome. I served it with Frito Scoops. Everyone at our Super Bowl party loved it.
