Creamy Carrot Soup

Reviewed: Jan. 9, 2011
Good soup, but a little bland. If I make this again, I will add more fresh herbs and maybe a little garlic to spice it up.

Caribbean Flank Steak with Coconut Rice

Reviewed: Jan. 7, 2011
Really good recipe. The acid from the pineapple and lime juice marinade really makes the flank steak tender. It was too cold outside to grill, so I broiled the steak for 10 minutes per side to medium doneness which was perfect.

Eggnog Gingerbread Trifle

Reviewed: Jan. 5, 2011
I used light eggnog and Cool Whip for this and we absolutely loved it! I also garnished this with a row of gingersnap cookies around the edge right before serving. It looked really pretty, plus it was delicious.

Buffalo Chicken Burgers with Blue Cheese Dressing

Reviewed: Jan. 2, 2011
These were really good-I put an egg and an handful of breadcrumbs in the chicken mixture to make the burgers bind better. It was too cold to grill the night I made these, so I broiled them for about 6 minutes per side. The next time I make these, I will definitely put the patties together ahead of time and refrigerate them for a while.

Blackberry Barbecued Pork Tenderloin

Reviewed: Dec. 27, 2010
It was too cold to grill when I made this, so I roasted my tenderloins at 350 degrees for about 45 minutes then glazed them for the last 5 minutes of cooking. Delicious! The Italian seasoning provides a nice contrast to the sweet fruity BBQ sauce mixture.

Overnight Asparagus Mushroom Strata

Reviewed: Dec. 24, 2010
This was fantastic! I did not have any Colby Jack cheese, so I subbed in sharp cheddar instead. What's great about this dish is that you can add any vegetables you like-it is really flexible.

Coconut Gumdrop Cookies

Reviewed: Dec. 19, 2010
These tastd good, but I had a hard time getting the batter to stick together and really had to work with it by hand to make these. I made them for Christmas, so I used red and green spice gumdrops, which were a good contrast with the sweet coconut.
