Spicy Sweet Potato Soup

This is the first time I actually made a sweet potato soup using chicken stock as opposed to vegetable stock. I was a little apprehensive at first, but let me tell you, I liked it. It smelt really good cooking and the other flavors seemed to blend and complement each other nicely (the cumin, etc.). Even the sour cream and lime zest was amazing and added a lovely flavour. BUT....what I didn't like and would omit next time is the peanut butter. After reading the other reviews I decided to cut the peanut butter in half. With only half the amount put in, it was still too strong. It took away from the other flavors and brought the soup down a few notches from "restaurant quality" (and why I rated it 4 stars instead of 5). Without the peanut butter, this soup, in my opinion, could be restaurant quality. By the way, I didn't have sour cream but substituted plain yogurt and the 'dollop' in the middle still tasted great (even my husband commented on it). Because of the lime zest power, I don't think it would make a difference using sour cream or yogurt.

Turkey and Quinoa Meatloaf

One of the few recipes that I actually didn't change a thing. Made as written and it was amazing. I even shaped mine like the picture (as a heart). My kids actually went back for seconds (which is a rarity). Thank you Drew for posting!

Chocolate Chip Banana Muffins

These are very, very good. I make these about once a week. I've adapted to make a little "healthier" as follows: Instead of 1 3/4 cups of white flour, USE 1 3/4 cup whole wheat flour. Instead of 3/4 cups sugar, USE 1/4 cup honey (add to wet ingredients). Instead of 1/2 cup veg oil, USE 1/2 cup of applesauce. Also, use Dark chocolate chips if you can find them. With the above substitutions the recipe still tastes amazing to us!

Homemade Black Bean Veggie Burgers

I have made these so many times that I know the recipe by heart. First of all, I do substitute 1/2 cup oats for the bread crumbs. I don't add more than what is called for. When you mix everything together, it does seem more 'watery' than typical hamburger -- but it's supposed to be. If you add more bread crumbs (or oats) they'll end up dry and bland. I ONLY bake these in the oven on a parchment lined cookie sheet. On the grill or BBQ they'd just be a complete mess. Also, play around with the seasonings to make it your own. Sometimes I don't add cumin and hot sauce but add 1 TBSP of Worchestershire sauce and diced Swiss along with the other ingredients. Enjoy!

Dill-Tarragon Salmon

Prepared this a little differently and it turned out fabulous. I mixed the yogurt, mayo, lemon, tarragon and dill together earlier in the day and let sit in fridge to allow the flavors to really blend together. I increased the amount of lemon (squeezed about a quarter of a whole lemon -- about 1/2 TBSP) because I find lemon really neutralizes any 'fishy' taste. I eliminated the mozzarella cheese entirely and did not mix in the parmesan cheese at this point. When it came time to bake, I spread the above mixture onto the fish and baked at 400 for 15 min. I then grated parmesan cheese on top of each fillet and placed under broiler to brown for about 3 minutes. It was excellent and my husband, who doesn't like salmon, really liked it prepared this way. Many thanks for the recipe idea, will make again.

Chicken Pot Pie IX

You can make this as a 'vegetarian' version by substituting firm tofu for the chicken. Cut into 1/2 inch chunks and use about a cup full. Instead of boiling with the veggies, saute with the butter, onions and seasonings until lightly browned (and I also add 1 clove of garlic and poultry seasoning). Then add your flour, chicken broth and milk and continue with recipe as written. Delicious!

Canadian Cedar Planked Salmon

Salmon grilled like this is the BEST! I've cooked this a number of times. As per recommendation of other user, I squeeze the lemon on top instead of placing actual lemon slices (for more even cooking of the salmon). I've also sprinkled onion powder over the salmon instead of sliced onion and it still turned out amazing. Also, I brush the plank with Olive Oil as well (it seems to reduce flare ups). AND.....my biggest tip would be to only preheat the plank for the amount of time suggested in recipe, no longer. The first time I did this, I threw the plank on and came back into the house to do some things, went back to put the salmon on and it was on fire! I guess I preheated it a bit too long. I was having a dinner party of 8 at the time.....but, believe it or not, it still came out great grilled on the completely charred plank and all!!

Banana Sour Cream Bread

Yes...this is very good!! I made no changes except only made one loaf (changed servings to 8). Found that 1 hr 10 min at 325 F was perfect. This will be my new 'one and only' banana bread recipe.

Baked Shells in Sauce

Thanks Krista B.....I'm giving this 5 stars because this is a great dish to sneak in tofu! You don't even know it's there. I make this recipe exactly as is. My 5 year old and 3 year old don't like things with a lot of strong seasonings or spices, so this is perfect for us -- it's become a regular.

Greek Pasta Salad

I really liked this -- and my kids liked it too. I used tri color rotini and added chunks of feta. It is very light tasting and would certainly suit a big BBQ or potluck event. Will definately make this again. Thanks for the recipe.

This truly is a great recipe...I know it off by heart I've made it so many times. TIPS: I agree with the other users that toasting the almonds is a MUST. I'm indifferent with toasting the sesame seeds -- sometimes I do, sometimes I don't. Also, I never add the sugar...instead I always dice up an apple (choose a sweet variety like GALA or FUJI). I've also added a pear instead of an apple and still was a great salad! Thanks for this recipe -- always a hit at my dinner parties..

Wheat Germ Whole-Wheat Buttermilk Pancakes

I make this pancake recipe at least once a week. My kid's love it It's great just as is -- I use regular whole wheat flour though (as opposed to pastry flour). Also, to spice it up a bit try adding 1 tsp VANILLA (quality vanilla is best if you can find it...not the imitation kind -- I found mine at a health food store) and 1/2 tsp of CLOVES....yummm....especially nice in the fall!
