Peanut Butter Carrot Cookies

I followed the recipe as written by reviewer cookaholic and the texture was fine. The carrot is interesting. These really aren't too sweet. I might make them again with my bumper crop of carrots.

This is addictive! Make sure to read the directions though- use mini marshamallows and Do Not try to melt them with the candy coating and peanut butter!

Quick and Easy Pizza Crust

The second time I made this it was so yummy. I used bread flour instead of regular flour. Patted it out instead of rolling. Used crust to make Mexican Pizza. Baked at 400 for about 30 minutes. Crust was light, soft, airy, delicious!

Broccoli Rice Casserole

Great! Even my hubby, who doesn't like rice, asked for seconds. Next time will finely chop the broccoli so it's easier for my toddler to eat. I cut the recipe in half but accidentally added the original amount of water, and it still came out great. Didn't saute the onion and celery, just tossed a little chopped onion in with the soup and omitted the celery.

Spinach Enchiladas

Yummy! I used a yellow onion and fresh spinach because that's what I had. I microwaved the veggies to save some fat. Used green chile enchilada saucea and homemade flour tortillas (that's all I had). Topped them with mozzarella instead of Monterey Jack because I ran out. Super quick and easy.

Oatmeal Chocolate Chip Muffins

I added 1 TBSP vital wheat gluten, which made them very light. Also used about 1/4 cup whole milk and then 1 cup water, just because I ran out of milk. Substitued about 1/2 cup whole wheat flour for some of the white flour. Couldn't even tell these were made with oats.

Chocolate Zucchini Bread I

So good and it freezes well too. Tastes great with milk chocolate chips. You can cut the sugar to about 1 3/4 cups before you notice a difference. Sometimes I use half whole wheat flour, and you can't even tell.

These are really buttery and delicious, although there aren't enough oats for my taste. Next time I'll try adding more oats and less flour. I did not use pecans.

To Die For Blueberry Muffins

My muffins were pretty flat on top, and the middle is sinking in. I don't think they are completely done in the middle, even though I baked at 400 for 24 min and the edges are crisp and brown. Maybe I overmixed them. I also used the brown sugar for the topping. The recipe should specify that the butter needs to be cold for the topping. There was lots of butter in the bottom of the muffin cups. Also subbed 1/4 cup wheat germ for 1/4 cup flour. Maybe that was part of the problem.

White Chocolate, Chocolate Cookies

This recipe is better than the one on the bag of white chocolate chips. My husband isn't usually a fan of White Chocolate cookies, but he ate alot of these! I used baking powder instead of soda. Also, I prefer the Hershey's white chips to the Tollhouse. Update: Tried making these with only 1 cup cocoa and they turned out softer. That's how I will make them in the future.

Honey Wheat Bread I

I LOVE LOVE LOVE this bread. I quit using the bread machine because it is SO much better by hand! Recipe is delicious as is, but I tweak it to make it healthier. I use 3 cups whole wheat flour and 2 cups bread flour. I also add 5 TBSP vital wheat gluten to improve texture, and usually 1 or 2 TBSP flaxseed for added nutrition. I have found that it needs to rise longer than written, so I pop it in a warm oven for a couple hours for each rise. Don't let it rise too long though, or it will get really hard!

Watermelon Pops

Just made these tonight for a party tomorrow. Really wish I had read the other reviews. The recipe is poorly written. I had to guess how much of each layer ingredient to add to the cups. My suggestions: Mix up the strawberry layer first. Freeze the pops after adding the whipped cream, before adding lime layer. I will update tomorrow on taste. Update: These are really refreshing on a hot afternoon. I'm going to make these again soon!

Slow-Cooker Chicken Tortilla Soup

I was a little skeptical of some of the ingredients, but wow!! This was so delicious. I used regular tortilla chips. Also used raw chicken breasts. Did not add cilantro until I served it.

Whole Wheat Honey Bread

I give this recipe only 4 stars because there are some key steps missing. For example, how big of a loaf is it? I had to make it 3 times before I figured out I should select the smallest loaf size on my Cuisinart bread machine (I too used the basic white bread option and lightest crust). Also, be sure to mix the dry milk and water. Maybe that's a standard step when using dry milk, but to a newbie bread baker like myself it't not obvious. The last time I made this I accidentally added an extra TBSP of butter. It was alot more moist and will keep making it that way.

Heavenly Chocolate Mousse

So rich! I am a true chocoholic and this was almost too much for me! I used the recipe to fill a 9" oreo piecrust. I thought I might have to double it but it was just the right amount. My in-laws don't like semi-sweet very much, so next time I'll try milk chocolate instead.
