Quinoa Porridge

Quinoa is known as a superfood so I was trying to find a recipe for quinoa for breakfast and this recipe is just what I was looking for! I left out the brown sugar and added it on top after it was cooked. It made two servings so I put one in the fridge to heat up for tomorrow's breakfast. Delicious and so healthy! Thanks!

Heavenly Angel Food Cake

Hot Cross Buns

I made these exactly as stated but used my kitchen aid mixer as another reviewer suggested for kneading. I don't know what I could have done differently exactly but these were small little rock-like buns. Not like the store-bought bread rolls we have every Easter. Sadly, my effort to replace our store-bought tradition with something healthier and home-baked went right out the window...

Chocolate Covered Easter Eggs

AMAZING! I made this exactly as stated, except I added a teaspoon of mint extract to the cocoa batch. Everyone raved over them! They said I were professional! My first time making anything candy related turned out fabulous! Thanks for the great recipe!

Spiced Sweet Roasted Red Pepper Hummus

This is delicious! I was sick of paying so much for store-bought hummus and knew I could make it for a lot cheaper (and healthier), and indeed, this recipe is a lot lighter than most prepared hummuses. I left out the cayenne pepper and parsley simply because I didn't have any on hand and it still turned out great!

Chocolate Chip Cookies Lite

I doubled this recipe to make 24 cookies, and OMG am I ever glad I did! These are fantastic! I baked the first 12 cookies for 10 mins and they turned out nice and soft. I baked the second half for 13 mins and they were a bit crispy on the outside and still very soft and chewy on the inside! (I liked them best this way!) I used gluten-free flour instead of regular flour and it created a very sweet, soft cookies, with a taste similar to merengue. I've been looking for a low fat, healthy cookies without butter and this is defintely a keeper! I try to follow a gluten-free, dairy-free diet so this recipe with my alterations was perfect! The only thing I will change is to experiment with less sugar because it was almost too sweet. It would be very tasty even without the chocolate chips as well!

Black Bean Brownies

For being gluten and dairy free, and for being made with beans, these were pretty good! I made them exactly as stated, leaving out the coffee because I didn't have any, and the chocolate chips. They have a very light, flaky and moist texture and are better refridgerated than warm from the oven.

Apple Crisp II

I made this as directed but lessened the white sugar to half a cup. It was still delicious and very sweet! I think next time I'll also halve the brown sugar. Some reviews recommended doubling the topping. I did not find this neccessary at all, there was plenty of topping! It tastes like a combination of warm apple pie and sweet oatmeal cookies on top, delicious!

Zesty Slow Cooker Chicken Barbecue

I made this for dinner tonight and it was a huge success! My husband said he wished he had 4 more pieces! It was so easy to make (I didn't prepare the sauce, just poured all the ingredients in the crock pot and stirred it up a bit). I used the extra sauce over a baked potato. Delicious!

Brooke's Best Bombshell Brownies

All I can say is OMG, these were the best brownies I have ever tasted! I usually make the zuchinni brownies from this site and thought they were amazing, but these are fantastic! They don't even need icing which is what makes the zuchinni brownies so delicious. I made it exactly as called for except I only used about 1/2 cup milk chocolate chips instead of semi sweet and they were perfect. They are fudgy and soft and oh soo good! This is my brownies recipe from now on!

Chicken Pot Pie IX

I made this recipe exactly as called for other than increasing the milk to 1 cup and the broth to 2 cups after reading reviews that said it was dry. It turned out great except there was far too much filling to fit in the pie. We ate half the pie for dinner and I just mixed in the remaining filling in the other half of the pie for leftovers. (We like less crust anyhow.) It all turned out delicious!

Carrot Cake III

I made these into cupcakes. I used 1 cup white sugar and 1 cup brown sugar, and 2/3 cup oil and 1/3 cup applesauce. I also was very generous with the carrots and left out the pecans (although they would be better with them, I just didn't have any on hand.) These cupcakes were delicious and extremely moist! Next time I'll replace more of the oil with applesauce though to make it healthier and it didn't seem to have an effect on the taste or texture. This recipe made 24 good sized cupcakes.

Banana Cupcakes

I just made these for my husband's birthday and he loved them! Everyone else liked them as well. They are very moist and definitely cake-like, not like banana bread. The only alteration I made was doubling the vanilla and I used 4 medium very ripe bananas (one heaping cup). They needed to be baked a little longer, about 25 mins, but they still turned out delicious! This recipe is replacing my current banana cupcake recipe for sure! Oh and I frosted them with Betty Crocker cream cheese frosting, not the recipe included.

Pretzel Turtles

These were fast, easy and clever looking, but they weren't a crowd-pleaser from my experience. I took them to a New Years party and had four plates full from one recipe and not even half of them got eaten. Most people said they just didn't like pretzels. I felt like it was a waste. Too bad.

Flourless Peanut Butter Cookies

I used all natural peanut butter, I think that might have made the difference. I also took the advice of other reviews and used 1/4 cup white sugar, 1/2 cup brown sugar and a splash of vanilla (I would recommend this change, it was still plenty sweet with unsweetened PB even.) I baked my cookies for twice the recommended time and they were still uncooked in the middle. Still tasty, just not very "cookie like", more like fudge almost.

Pumpkin Bread IV

I have to say, I think this bread is just ok. I made it exactly as called for except I didn't add any raisins, chocolate chips, or nut. I think these might of made it better. It was however a nice, moist loaf which I like, just a little plain.
