Carrot Recipe

I changed this recipe up a bit but LOVED it. I used coconut milk instead of milk and eliminated all of the sugar. I think carrots are sweet plus the raisins make for plenty of sugar already. I added 1-2 teaspoons of cardamom to the coconut milk/carrot mixture so the flavor would infuse. DELICIOUS!!! It took far longer than 10 minutes for the liquid to boil off.

Shish Tawook Marinated Chicken

I thought it was odd to make this with ketchup and prepared mustard but I thought I'd try it anyways. It turned out tasting artificial and inauthentic. I didn't like the odd sweetness to it. I won't make it again.

This was just ok. I ommitted the rosemary because I don't really like it and added cumin intead. I found that the recipe was kind of bland and if I made it again would add more spices.

Spinach, Red Lentil, and Bean Curry

Very tasty! I thought it needed a little salt. Lightly salting my portion seemed to bring out all the indivdual flavors. I'll definitely make it again.

Chicken Tikka Masala

I would have given it a 5 if it weren't for the changes. I followed other's advice and decreased the salt; 1 tsp in the marinade and 1/2tsp in the sauce. I used chicken thighs instead of breasts, used olive oil to sautee the spices for the sauce, and used a mixture of 1/2 cup greek yogurt(non-fat) and 1/2 cup half and half for the sauce. Next time I would use the full cup of greek yogurt and omit the half and half and the sauce would still be rich enough. Absolutely delicious!!! I will be making this often.

Thai-Style Tilapia

Absolutely delicious. I ground up the red pepper flakes in the blender with the rest of the sauce instead of sprinkling them on top.
