Garlic and Rosemary Shrimp

Reviewed: Jan. 9, 2004
Wow. Yum. A big hit in our house. Easy, delicious and the kids ate it up. One note: a pound didn't serve four here, even with kids being some of the eaters. The second time I increased just the shrimp, and there was still plenty of sauce. I will definitely make this ag ain.

Seafood Au Gratin

Reviewed: Jan. 9, 2004
I agree with the first review. This was way too seafoody and salty. Not enough ingredients other than seafood to complement the seafood flavor. It was edible and I finished it but my kids didn't like it. One thing to remember is to buy as much stuff pre-done as possible or do it in advance (shelling crab and shrimp, deveining, etc.) Prep was very time-consuming. I won't make this again.

Salmon with Tomatoes

Reviewed: Sep. 4, 2003
Wow, YUM! I too was skeptical about doing something so different with salmon without much to go on for reviews but this is REALLY REALLY good. My husband loved it too which is so gratifying plus I was nervous because he personally caught the salmon. We served it on rice with green beans on the side.

None of us cared for the flavor of this at all. Will not make it again.

Baked Teriyaki Chicken

Reviewed: Aug. 27, 2003
I have made this twice and I think I got it right this time. The sauce is excellent, that is, until the chicken juices dilute it in the pan and make it all runny. My solution is make about four times as much sauce and use half of it for cooking the chicken, the other half to pour over it when it's done. Strange I didn't read about anyone else with this happening to them, but that's my take on it. My family ate this right up, the three-year-old even went for thirds! This will become a very regular dinner for us with those revisions. Thanks, Marian.

Grilled Chicken Adobo

Reviewed: Aug. 5, 2003
Yummy and sooo easy. My husband likes this one better than the one his brother spends hours on. Kids like it too. It's a keeper! We also ate it right out of the pot, no need to grill. I might try it next time just to see...

Italian Chicken with Garlic and Lemon

Reviewed: Aug. 5, 2003
Very good flavors, good company food. The only thing I would comment on is that frying the potatoes until golden, then putting them in the oven is too long a cooking time in my opinion, I thought the result would be mushy so I didn't fry until golden, just a few minutes. They turned out lovely. The kids didn't care for this one, otherwise it's a five star.

Red Skinned Potato Salad

Reviewed: Jul. 31, 2003
Wow, even I who have never made better potato salad than "just OK" for my potato-salad-lovin' hubby pulled it off with this recipe. He's requested a few times since. One change I made is cut the mayo and bacon in half; alternatively, double the amount of potatoes. I also used red onion instead of white and added olives. Great recipe to play with!

Unique Fruity Green Salad

Reviewed: Jul. 31, 2003
This was a hit at our 4th of July party. Great flavors in a combination I would never have thought of myself. Methinks there may be a bit too much dressing, good as it is. I would toss maybe 2/3 at first and go from there. Also, I toasted the almonds. Yum.

Skillet Beef and Celery

Reviewed: Jul. 25, 2003
This was OK, nothing special. I probably won't make it again but if I did I would double the meat, there definitely wasn't enough.

Mandy's Lamb Enchiladas

These had good flavor, the only thing I will do next time is spice the meat up a bit more. They reheated well, also.

Potato Casserole III

Reviewed: Apr. 2, 2003
Personally I would have given this 5 stars, I really liked it, but the kids said yuk and my husband and his brother said it was ok, nothing special. Was a good complement to a grilled steak dinner, good flavor. I'd make this again for an all-adult crowd. I also liked that it was done and cooking while I was busy with the other food and cleanup. It was easy to make also.

Sirloin Steak with Garlic Butter

Reviewed: Apr. 2, 2003
This was a winner for everyone at our house. I was a bit leery using butter, it's just not common, but it worked well with the garlic. I served it with a potato casserole from this site and green beans. Good eats!

Sicilian Brasciole a la Lena

Reviewed: Mar. 31, 2003
This was good but a lot of work. There were so many bread crumbs they fell out of the meat. In my opinion this is company fare, not everyday eating. It got mixed reviews at our house. Basically a different type of spaghetti.

Country Sausage Gravy

Reviewed: Mar. 24, 2003
This was tasty, but too spicy, even with cutting back half on the crushed red pepper. I'd start with 1/4 tsp. if I make this again. If you're looking for traditional sausage gravy, this isn't it, this is a lot livlier and less creamy, but still good.

Cheesy Tuna Melts

We liked these OK, they were easy and it's good quick easy nutritious food with stuff that's likely on hand. Liked the addition of tomato. Kids weren't too hot for it.
