Banana Bread Cookies

Reviewed: Jul. 11, 2009
Very good cookies! I did a few changes however, using half brown sugar, double the banana, added 1 C. oatmeal and also added chocolate chips. I'm expecting them to be even better the next day just the way banana bread is!

Patriotic Pasta

Reviewed: Jul. 7, 2009
Made this last night for dinner and it was a hit! I did not have any green onion so added 1/4 t. onion powder instead. My husband decided to come home for lunch today which he normally does not do, said he wanted to have some more of the pasta salad that he'd been thinking about! He's a picky eater so that is quite a testimat.

World's Best Lasagna

Reviewed: Jun. 24, 2009
I made this today as a surprise for my husband since I've never made him homemade lasagna before. It turned out great. I simmered the sauce for 3 hours and did not add any salt to it and it was salty enough for us with all the cheese in it. I still have half the sauce left which I'll freeze and my husband already put in a request to take some to work with him in the morning! He's Italian and prides himself on the sauce he makes but I could tell he was really enjoying this and went back for seconds, he just wont admit that I, a non-Italian could make something so good!

Washboard Cookies

Reviewed: Jun. 23, 2009
These turned out very good. I ended up with 23 cookies and they were done in 15 minutes. Nice crispy crunch to them yet chewy in the center. A very simple recipe to mix together when you don't have a lot of time and nothing special you'd need to have on hand.

This was excellent! I used half white sugar and half brown sugar for the topping and diced up the fat free cheam cheese so there were tiny bits of it throughout.

Fry Bread Tacos II

Reviewed: Jun. 10, 2009
My first time of making fry bread and it turned out great! I had to add about 1 extra cup of flour all together for it to be the right consistency. I wanted to mention that I took the suggestion of making a hole in the middle for the bread to cook evenly, and on the last one I just made the indentation. The one without the hole turned out the best I felt so I'll just do that when I make these again. I really surprised my husband with these last night!

Honey-Peanut Butter Cookies

These were fast to put together and very tasty! I used splenda in place of the sugar and only had enough honey to make half a batch. I ended up with 20 good sized cookies!

No Bake Chocolate Oat Bars

Reviewed: May 14, 2009
These are so easy to put together. I did cut back a little on the butter using 1 1/2 sticks instead of 2 and I used sugar free chocolate chips and the splenda brown sugar blend, my husband and I both enjoyed them.

Man-Lovin' Potatoes

Reviewed: May 14, 2009
Very good! I took anothers suggestion and added a little franks redhot and dijon and also doubled the onion. I made it up earlier in the day then later just had to pop it into the oven. My husband really did enjoy them and went back for a second big helping. I used fat free sour cream and sharp cheddar cheese.

Green Pepper Tomato Salad

Reviewed: May 12, 2009
This was a great base to start with to use up veggies I had on hand. I did not have any green pepper but used 1/2 a red and 1/2 a yellow along with 2 roma tomatoes and 1 stalk broccoli, sliced up 12 black olives and used the last bit of celery. My husband does not like raw onion so omitted that but added 1/2 t. onion powder. I also added 1 T. olive oil and 1 T. grapeseed oil to the dressing and added some bowtie pasta to really dress it up. I used splenda in place of the sugar. You can change this in so many ways, just depends on what you have on hand that you want to use up. A very fresh, tasty and healty side dish!

Grandma's Old Fashioned Tea Cakes

Reviewed: May 11, 2009
These turned out really well. I made them at work so did not have real butter and then I found out there was no nutmeg so I substituted cinnamon. Next time I will use nutmeg! I mixed up the dough, doubling the recipe, and put it in the cooler til the next day. I did not roll out the dough, I used a small scooper and then just flattened out the ball of dough on the pan with my palm (wearing plastic gloves) they baked up well and everyone enjoyed them. Nice chewy cookie when you want something not so rich.

Bill Clinton's Lemon Chess Pie

Reviewed: May 11, 2009
I made this for Mothers Day and it turned out lovely. I bought 2 frozen pie crusts, not deep dish! I took the suggestion and used half & half instead of milk and used 1/2 cup of lemon juice instead of 1/4. I took the lazy way out and rather than zest lemons I bought lemon peel from the spice isle, I didn't have a lot of time since I had to bake it Saturday after work. I used splenda instead of sugar. Let it cook and then in the fridge overnight and took it to my mother-in-law for dinner. Everyone loved it and it cut beautifully. Since I did 2 pies it only took 35 minutes in the oven. I'll be sure and make this again!

Banana Cake III

Reviewed: May 3, 2009
This turned out very well. I use splenda instead of sugar and did not add any nuts. I used a 9x13 pan and only made half the amount of frosting and it was plenty. I also added about 1/2 of a small banana to the frosting and my husband said the frosting was great! I also used splenda for the frosting and only needed about 1 1/4 cups to sweeten it. I think the cake would also be good without any frosting.
